they are still worth processing but the difference is a bit smaller, especially in year 1 becausse you wont have artisan buffs. say no star fruit sells for 50. the keg item i think will be 150. so a profit of 100g. but a gold star of that item may sell for 75g so you will only have a 75g profit instead.
I usually sell all my gold star stuff and process normal and silver but everyone plays different

The profits site can be a bit misleading as it can't take everything into consideration. Garlic seeds are cheap so you'd end up having a massive field, and they only make 20g profit each

Cauliflower are a bit more expensive meaning you won't have such an enormous field, but they're also worth significantly more, especially when pickled
