Depending on you financial circumstances you may want to do pumpkins especially if you are able to process them all (but if you can’t then you can process them into winter too, same with going cranberries). But if you want to spend your time elsewhere I would recommend pumpkins, just because there is some time that is spend while harvesting cranberries

Do i water in the morning then upgrade and the next day being a rain day my crops should be good

Nothing is stopping you from doing it on a different day. But you don't get it back for 2 days, so if the timing of your crops is problematic you might want to wait.

I just get sprinklers, which removes the watering can from the equation anyways

Just upgrade when you feel fit. If you’re okay with not watering crops for a few days, upgrade. If you prefer to keep them watered and harvest on time, don’t upgrade until after harvest. Or, if you still want them watered, wait until the next day will be rainy, then upgrade and use a rain totem the next day.

I think Beach Farm is challenging and the "intended" way to enjoy Stardew. 🤔 You don't just spam plants. You plan accordingly and still can get Farming to level 6 on time.
