note this is not just a question of patience, it's a question of organization and throughput.
your kegs will only process so much before your next harvest is ready, and the rest should be processed elsewhere or it will just pointlessly pile up (or you should sell it as is ofc). so you fill your kegs, then you fill your preserve jars, then you put the rest to dry
obviously you could theoretically just Make More Kegs but you can only make so many at a time (limited by oak resin, wood or even iron for a change) and in the meantime you still want to earn max money.
