So I’m just taking it at my own pace now

The option that worked for me, and I did this twice, was getting to a point where I realized my mistakes were such that I would be better off taking what I'd learned and starting over. My overall third save, using what I'd learned to my full advantage, was a resounding success, and made it to year 14, to perfection and beyond.
I found it easier to start over with a clean slate and a clear objective than to live with the fun-sapping specter of regret.

This third save I always refer to as my first one, because I don't really count the first two, which never made it out of year 1.

But grass is also your friend. They gain friendship points from eating grass, and it stacks with petting. And once they are nearly maxed out (4 hearts, I think), the points they gain from eating grass is more than the points they lose from not petting them. So any day they can eat grass is a day you can safely not pet them and not worry about losing points, as you normally would.
Hay just keeps them fed. Grass makes them happy.

Up to you, they take time to get though because you can only get them via incubating eggs.

They're slightly worse than normal chickens, but don't require any actual effort other than feeding to get the max value out of them.

Void eggs make a good gift for Krobus and Sebastian as well.

No, not completely. If you want one or two for variety, go ahead. But in the long run, regular chickens will win out because large eggs, regardless of quality, all make gold star mayo. There is only one quality of void mayo, and that's regular.

Also, chopping trees gives foraging xp, as does scything weeds. And if you want a nice place for good foraging xp, repair the bridge at the beach, as all those corals and sea urchins you can pick up there have some nice xp.

Watch the TV every morning before you leave the house. It will give you game tips and recipes, as well as alerting you to events. Clear ground for planting the 15 parsnip seeds you got to start. Head into town and spend the 500 you have for potato seeds and plant those as well. Chop down trees until you get enough wood to make a chest, which you'll need because your inventory is so small.
Then when you run out of energy, head out to look for forageables, which are conspicuous items lying on the ground that you can pick up, items which can either be sold for money or eaten for energy. (Before heading out, be sure to put most of your items in the chest so you have room for the forageables.)
