It's really a coin toss. Bats help some people with bundles for the Community Center. Mushrooms can be more profitable and a good food source early-game, and you get something free with it that I really like.

Yes, there are a couple of exceptions, and why I qualified it with "primarily". Rhubarb is a vegetable, but the only decent use for it is adding a bunch of sugar to it and making it into a pie, otherwise it tastes like bitter inedible crap. In fact, the green leafy parts are inedible and the only part they use is the red stalks.

Make sure they have grass to eat. Eating grass makes animals happy, automatically elevates their mood to max (255) and gives friendship points. Hay is for rainy days and winters.

That's a mistake. Only clear what part of the farm you need for your buildings and crops. Let the rest grow wild. You can routinely cut grass for hay, leaving tufts here and there to regrow. You can chop trees for wood, and let the seeds that drop from trees grow more trees, or pick up the seeds to plant somewhere more convenient for you.
Only things you should clear are weeds and debris, like rocks and those little logs.
