If you have neither, you can get some good income from fishing instead. The mountain lake has some tough but valuable Sturgeons in it, in the daytime during winter (and summer)

If you don't have the greenhouse, don't have animals, and are really bad at fishing, you're kinda stuck. Didn't prepare enough for winter... Medieval problems

The medieval solution would be to lay siege on a neighboring city to ransack their stuff, but you're a farmer and not a warlord

Honestly the ways you said are the first steps up to a stable way Ancient fruit/starfruit, start that kegging empire. And yeah like GigaFreak said, get some animals, get the greenhouse fuuull you will soon start to learn what works best and get a routine going with kegging, animals, crops etc etc

There isn't anything like that, but you can fix the minecarts fairly early on to form a fast-travel network (...which OSHA would absolutely hate)

There's one at the bus stop, one at "town" (next to Clint's and the museum), one at the mine, and one at a... not-so-important location that becomes reachable with a certain other Community Center reward (the minecarts cannot take you there until you earn it)
