Usually people do Parsnips, Melons and Corn since you can do it within Spring and Summer Pumpkins are very profitable/expensive

Yes, it impacts quite a few things. Most of it's not to a large enough extent to care, but it's there. You get more chests while fishing, you get slightly more wood from trees, Animals like Ducks and Rabbits drop their secondary loot more often.

The most impactful buff daily luck has is when mining though, as it increases the rate at which Ladders spawn.

There's more stuff it impacts then that as well, the wiki has a full list if you just search 'Luck' on it,

If your goal is to get deep (for progress or if going to ||skull cavern for iridium||, I'd avoid wasting time and energy mining on bad luck days.
If you just want ores, it really won't matter as much, since the best way to farm ores is just resetting an elevator floor (like floor 40 for iron) over and over anyways.
