Nah, I didn't see the need to. Got myself the Steel Falchion, which I believe is the 3rd to last sword you can acquire, just from going through the Mine. You could if you're having trouble, I guess, but you should be fine. Just break the monsters' ankles.

No. In your inventory theres several tabs like ones for friendship and ones for the map and so theres ones that's for collections which include the shipment tab, the fish you've caught, meals cooked, achievements unlocked, mail you've read etc.

After clear cutting my first farm as fast as I could I realized it was better to take your time clearing and letting the trees spread and stuff to maximize wood and ||getting mushroom trees|| higher chance for those if you still have sections that aren't cleared.

Yes. I always advise new players to only clear the areas you need for buildings, animals and crops, and to leave the rest to grow wild with trees and grass. You want the extra wood (and seeds) and hay.
Bare dirt gives you nothing.
Clear the weeds and debris, of course. That stuff can be destructive if it gets out of hand.

the fishing minigame has a learning curve but there are ways to make it tolerable, such as purchasing a training rod (make sure to switch back after making a few levels cause you can't catch better fish with it) or buying trout soup from willy, eating it and then going fishing to level up a bit faster. either way you gotta practice and it'll get better in time

it's both actually, but mostly the levels cause the green bar gets bigger with each new level
in my experience fishing is frustrating mostly because patience is required to get good at it
