to level fishing without catching fish (choose 1):

1. buy training rod and catch easy fish
2. build fish pond at Robin's.
3. Harvest crab pot bundle items from beach. Kill rock crab in mines until you get a Crab (item) and use that for crab pot bundle. Rewards 3 crab pots. Then befriend LInus until you get Wild Bait recipe. Put wild bait in crab pot until you unlock regular bait, then put regular bait in crab pot until you unlock level 3 fishing = buyable crab pots. Buy lots of crab pots and fill them every day until fishing levels up to, like, 10

catfish is challenging. Walleye, not so much

then no, catfish should be easy enough

Yes especially early game so you don't have to water the crops so much and saves more energy (if you don't have access to sprinklers)

Also it can be quite hard to catch and has an incredibly low bite rate in the mines

Try upgrading it to copper first, don't upgrade your trash you can upgrade that later in the game
