You can also do a lot of mining, fishing, and socializing. Winter seeds can be planted both for forage, and to prepare the field for next spring

I'm glad I got the mining started, I've done a few (incredibly terrible) skull caverns runs, and I got to 9 hearts with Linus recently (best character in the game fight me on that)
I have got some winter seeds growing, but I haven't done it early enough to matter much so I don't think it'll be too much of a help

and it'll help you prepare for next winter
I usually find myself overburdened early spring when it comes to planting crops, so I like to plant as much winter seeds as possible to minimize how much field clearing I need to do in spring
