Not a great idea. You should only clear the space you are currently using the let the rest go wild. Sure, clear debris like weeds and rocks and logs and stuff. But leaving the unused areas to grow grass means you can cut it for hay, and leaving trees gives you a steady supply of wood and seeds.

You should be able to tap your heal item on the hotbar and use it before you autoequip sword. Can't do it if you're in melee range and using auto attack, so always top off your health when you drop below 50%

It's fine to, you can just keep resetting the same floor. You'll find more gems on luckier days, but Ore itslef shouldn't be that impacted.

For fish you have to either perfect catch or quality bobber on an initial gold quality fish
You can easily get iridium fish as early as day 2 spring year 1

Iridium fish is the result of getting a 'perfect catch' on what would have been a Gold Quality fish. Fish quality is based on how far your bobber is from Land, and a little bit on your fishing level. So higher Fishing, and longer Casts (while also making sure you don't land close to other land) will get you better quality fish. From there it's just a matter of getting better at it and getting perfect catches
For animal products, the quality is based on your friendship level and mood of the animal. So just keep petting them, and feeding them. If you have grass outside, let them out to eat it since that gives more friendship and mood points.
Cheese will be gold quality if made from Large Milk (also based on friendship), and can be aged into Iridium with a later game machine.
Most other artisan goods don't really get quality (Jam, Oil, Pickles, Juice, etc), except wine and beer which can be aged like cheese.

As for setup:
-Level 10 fishing. This is to Elongate green bar and to increase chance for higher quality. Also has a requirement of level 10 to catch.
- Iridium rod to attach bait to reduce time for fish to bite. Better with wild bait. As for iridium rod you should use cork bobber to increase size of green bar.
- seafoam pudding makes it easier as 4 levels would increase size of the green bar.
Total is 14 fishing levels with iridium rod fitted with cork bobber and bait

Perfect catch is when you do not let the fish leave the bar for once. Once done it increases quality by one and is one of the two ways of iridium quality fish.
Also it takes 6 seconds to do a perfect catch from start of the minigame to finish. So you're going to have to endure 6 seconds of pain

You can make any existing save file Co-op by simply having Robin make extra Cabins in them, which act as the save slot for new players. Then open that farm through the co-op button.
I'd recommend just starting a new farm in co-op instead though, which will automatically put the cabins you need.

Whatever you still need for CC, and then Rhubarb is a good option, especially if you have Deluxe Speedgrow, which allow you to fit 3 harvests in if you want.
If you just want to to do one harvest, and then strawberries after, just know the Rhubarb won't be done until the 14th without speed grow, so you can't use the profits from it for Strawberry seeds.

Just gotta fish a lot really. Fishing closer to land helps a bit, but you'll also get more trash that way.
Algae can be dropped by slimes or fished from any freshwater. Seaweed is from the ocean, and can very rarely spawn on the right side of the beach (but... very rarely...)
