My pond Legendaries are Legend, Crimsonfish, and Glacierfish. I have a sturgeon and two each of blobfish and lava eel on top of that. I will be testing the yearly yield next year if I can build up enough cash reserves to do a Sell-Once-a-Year run with the appropriate profession swapping.

The best Non legendary fish is still the Lava Eel

But numbers wise, even though the Legend doesn't produce most of the time, it still makes more money per day with aged roe

Blobfish outproduces lava eel enough to make up the price difference. On the left is year 9 of a past save where I was transitioning from 1 to 2 ponds each of lava eel and blobfish. In total money, over the span of a year, lava eel barely won out by fractions of a percentage point. On the right was year 12 when I had 2 ponds of each the entire year and blobfish won out, again by fractions of a percentage point.
(Both images also show just how badly ice pips suck. LOL)

Don't factor aging into it. Aging is a trap. It's not as good as it's often touted as. Once you get a large enough winemaking operation going, the profit increase from what little you can age will be such a small percent of your overall profits that it will hardly seem worth the effort.

Gold per day, and overall gold are two completely different things, and you'll argue in circles over it, pointlessly. If you have a finite amount of fruits to process, making them into wine is always better. If you have a huge volume of low-value crops, dehydrate them because a huge backlog of crops is just money sitting around doing nothing.
Veggies are always better in jars. Never make juice. I don't even extend an exception to pumpkins and red cabbage, due to me favoring gold per day in their case.

If you do have Artican, you can still make a bit more money dehydrating gold quality. Never dehydrate iridium quality (such as Botanist-aided blackberries) because you will lose money.

1. Villagers will naturally lose hearts if you don’t talk to them, it’s super slow and will stop decaying once you reach max hearts with them (10 hearts for regular villagers, 8 for datables, 10 for dating). This is for all but marriage which always decays and never stops
2. Yes animals will decay if their friendship is not kept up. You don’t have to pet them tho, grass can keep them from losing hearts and autopetters stop any decay too

Basically the animals have a check that if you don’t let them they lose friendship but the autopetter cancels that and grass can give enough friendship to completely negate it
