The pitfall with telling people that it's your last update is that you might be wrong; cf. Terraria, which did that around four times.
Most developers stop updating a game because it's no longer economical, so they can be pretty confident in their announcement.
On the other hand, neither Terraria nor Stardew Valley have been economical to update for years; they just print so much money that neither developers much care.
The reason why this kind of developer would stop is because they don't feel like it anymore, which is much harder to predict.

For players bad at fishing, I'd recommend not trying the rivers during rain in spring and fall-- nor mountain lake in the daytime for summer and winter.
The former has catfish; the latter has sturgeon. These are very valuable but also very strong. Go when you're confident at the fishing minigame, and/or have good tools (iridium pole with a trap bobber equipped to it)
For Summer and Fall, Super Cucumbers show up in the ocean during the nighttime. They're worth even more than catfish and sturgeons.
Targeted bait will help you make the most of these. It's well worth sacrificing some catches to make the bait.

The lake and rivers also have lingcod in winter, which is even harder than catfish or sturgeon. It can be really annoying.

The bigger problem with lingcod is that nobody wants to buy the damn things (they fetch a considerably worse price than sturgeons)
Fortunately, targeted bait helps you focus the sturgeons specifically.

It's not enough to hook a Legend II every 7-8 casts; you need to successfully catch one more Legend II per 7-8 casts than you would have managed without the targeted bait
That's a considerably higher hurdle to clear.

Ever since the update we got unique dialogue for specific items and some would be better off with a special dialogue.
For example George could proclaim "A leek fresh from the farm? I can't get enough of these!"
Or Linus having different dialogue for bad forages (unless they updated it) like "You should be careful, these are the poisonous ones."

It means you can craft the next tier metal from the previous, example iron from copper. Yeah you lose a little in the process, but if you're in a pinch and need iron but all you have is copper...
