Priests get PI when they PI someone else, so its redundant to cast on each other. They could alternate PIs for 40s of PI each, but it's not very efficient. If they take 1 min Dark Archangel, they could alternate PIs every minute, but that runs the risk of missing a cast depending on kill time, and is still worse for raid damage overall.

Rotation helpers aren't good. They aren't designed well enough for most situations. Your best bet is to sit at a training dummy and embed it into your mind. Then go into raid and focus on what you need to do.

Simulations run tens of thousands of “fights”. Crits on these individual fights are exactly as you would expect in game, each ability has a % chance to crit, and it calculates that. From there it compiles all the iterations together and averages/reports the median.
So yeah, if you’re trying to play for the rng you could drop crit I guess. The issue is most of the actual bulk of rng is in procs like sophic, and not crit. There’s also a gambler fallacy here where you’re equating less crit with higher/lower peaks. Which is true, but unrealistic even on a high roll. Generally we (Assassination) are not using new stats, or at least, it's not super important that you recraft your pieces to different stats. What you have today should be fine. As for new pieces, in my testing the new embelishment options (sporecloak + thorn) was basically the same as current (patch + thorn) when using all 10.1 gear. So, on Tuesday you don't need to use new stuff or whatever.
However, if you want to ahead of time, what I did was I crafted 2 new pieces, a Sporecloak, and an extra off-piece that holds my toxic patch currently. This is only for convenience, so I can swap pieces as I want without having to find a crafter

that still means you would lose 50 damage
it's still inefficient to force a cast, since you're not getting the full damage
also on bosses it would be doing like maybe 0.1% of their health
sudden demise is a percentage of your bleed damage remaining
which is a flat number
if you have 150 damage on rupture, 300 on garrote, and 150 on crimson tempest or whatver, that would be 600 damage total remaining, which would mean a target under 400 health would die instantly
