Being honest, most any crafting combo isn't going to make or break your gameplay or numbers. Almost all of us here would have bigger numbers by improving play moreso than what small gains you get between the differing combinations. Unless you just go off the rails for something like cowl (without the ring) which is a straight -dps.

With embellishment busted and some aspects of the patterns just being a dps loss in general, cowl for all rogue specs and druids iirc, (idk how it sims for DH) I find it hard pressed there won't be some adjustments this content cycle that will shake up or flip the "best picks". In other words outside cowl honestly just pick what you have an easier time keeping max ilvl throughout a content patch. If you can't find a blacksmith just go like neck/thorns or snowball set.

Ambush is currently only used with non-venthyr builds using subterfuge
The reasoning is a little complicated, but the most important of them is the difference in combo points on crit (up to 4 vs 3) and it's interaction with Flagellation.
You also have to consider the additional poison application chances. Ambush is not considerably worse or better in any situation, so you aren't losing out on much if you don't use it.

I can guarantee you 99.9% of people here are not playing perfect to the sim and the small differences between embellishments are so low on impact it doesn't even matter really, lol. That's the point. If people aren't able to find crafted daggers on their server it really isn't a big deal if you just use the ner'zhul and go neck/whatever and can keep them at max ilvl via M+ matrix readily.

For the vast majority the differences do not matter at all.

Most professions have some knowledge stuff that increases that by 50%, meaning you'd get 100% of what a level requires instead.

Blacksmith in particular

Gets 50% from tree, 15% from hammer and 25% from quenching fluid. So instead of 66% of the skill required for a level, you get 125%
