Your mouse controls both hands simultaneously. When you swing, your top hand gets locked in a straight line. While your top hand is locked, move your mouse up slightly to move your bottom hand to straighten the blade out. This is the key to getting perfect slices even if you barely swing

holding shift helps your guy rotate faster
and then you can use slow mo to better time the kick
shift is the speed button but only works in short bursts

If you want to really max out the turn speed, learn how to control your feet. If you're rotating around a foot, your turn is pretty much uncapped
Do this by kicking and rotating around the foot you push forward with, use slow motion to get a good feel for it

Outside of combat, just get a sword and swing it around in the air. Experiment with different speeds and ranges of motion, wider ranges of motion require less speed, shorter ranges of motion require jerky movement. Think of your mouse as directly connected to both hands, think about how your weapon physically reacts to your hand movements. Notice how your hand locks into a line when you swing. Just experiment
