It's two things, one is your starting city (which has minor story changes + what other classes are near your vicinity when you start) and the other is that you can't change classes until you hit level 10 (which is pretty fast admittedly).

You can't be class-less anyway. You have to start as something.

Another reason is there is one other class that starts at level 1 but you cannot choose to start as in character creation and their starting city is in Limsa (same as Marauder and Arcanist) so if you wanted to main that class in particular, starting in Limsa would give you the fastest avenue to do so.

i've leveled mnk to this point and it seems fine, i just got shadowbringers today or whatever the expansions called, and thought i'd give SAM a whirl, and wow, it did not go well in a roulette, and this is after watching one of those guides and reading up on rotations, probably because i've been playing mnk now for a couple weeks and just touched sam, but was hoping for some insight at least from a leveling perspective how they go, if slogging through the growing pains of SAM will actually teach me anything or if it will be an unnecessary struggle and its better to just power through as MNK and then compare at 80 if i want to later.

At 52 you have the basic SAM kit

At 62 you get a decent idea of the flow

Im not an expert in either but have played both and they're fairly similar to each other. If anything Samurai is a lot more straight forward than Monk. It might have just felt weird cuz you got leveled to an awkward SAM level in roulette.

I feel Samurai gets a lot easier once you get the passive that gives kenki with every weaponskill, even if you dont land your positionals (though you should). It at least makes it a bit less punishing and means you can still do your big damage attacks.
