NAND2Tetris is a free online resource that walks you through how to build a CPU, and run code on it. Turing Complete is a game on Steam that teaches the same thing.
From there, you can look into x86 assembly, and hopefully when you go to run the tools that show you machine code, it makes more sense to look at.

You could try to factory reset the routers, but then you will lose all configs, so if its PPPoE or whatever, then you may lose internet connection all-together.

Working with the ISP to do bridge mode the way they want it is key to not having issues.

Well it will work by coercing supply chain vendors to implement it client side.. apple, android, and whoever wants to get their apps/tools into those ecosystems

So you might be better off with some clownishly insecure chinese scam phone that does not receive updates anymore.. possibly linux based non-android phones will become the default for privacy minded indivuals.. possible that mobile devices will need to be emulated on host devices..
You could start by looking into services, that let you control updates as well as leave the key management to you.. but those are not widespread
