Some good mods for that:
Realistic Bleeding + Decaps, UAO (cant remeber what it stands for but its audio), butter stabs, Lift anywhere

Instant slowmo + silent is good too

Enhanced difficulty if you have the skills

Interesting, also they need skeletons to be in the NPCs so it's not like stabbing a blob everywhere, skulls shouldn't be as easy as a stomach, maybe make the ribs try to hold onto blades too sometimes

Theres a mod called Internals that adds lungs and shit although you cant see them, stabbing them will make them slowly die
