I present: a hooverville stew. Onion, potatoes, macaroni, canned tomatoes, salt and pepper.
Back on that keto grindset. Scratch made mushroom soup, grass fed sirloin cooked to a perfect medium rare and served with a delectable leek jam.

It is good. And leek jam is really simple, just time intense.
. Chop and clean your leek very well. Cleaning is up to you but the best method I have found is to slice it length wise into quarters just in front of the root so it all stays together and run the flayed stalk under running water opening up all the layers to clean them, then slice into smaller pieces as you would a green onion. You can also do the bowl method but I feel like its a waste of having to clean a bowl and a colander.
Now that the leek is cleaned let it drain of water while you melt about 3 tablespoons of good butter in a large skillet over low to medium-low heat. Once it has melted you may let the butter brown to give it a different flavor or simply add the leek. A pinch of salt to help things along but from here the entire recipe is just stir, stir, stir. For like 2 hours. Don't let the pan get too hot, you are looking for just a gentle sizzle of the leek in the butter. It doesn't need to be baby-sat like onion does but make sure to give it a stir every 5-10 minutes. It shouldn't dry out but if it does add in a tablespoon of water and stir it in. Eventually the fibers in the leek start to break down and you can kind of mash it in the pan with the "sharp" end of a flipping spatula. From there once its gotten a good color and is mashed well enough you can add your choice of seasoning or let the wonderful sweet leek flavor stand alone. Leek is sweet and delicious enough as it is but you can add in some sugar, pepper, nutmeg, or other sweet spice.
For an alternative and more savory version dissolve a boullion cube in about half a cup of boiling water and add that at the start instead of a pinch of salt. Beef, chicken, pork, vegetable, etc. You can use a little higher heat and it will cook faster and be a little more jam-like in consistency but it won't be as sweet but will complement the type of dish to the type of bouillon used.

depends where i am, usually ill pan fry, but if i have a bunch of them and want to do some prep ill just lightly oil/season them and oven bake

Grillings is always choice. I like to marniade pork overnight in soy sauce, onion juice or powder (depending on time), and garlic before cooking. This time I added cinnamon to the mix, and the results were pretty interesting.

Tonight's dinner. Roast butterflied lamb leg marinated in herb and garlic, buttered green beans with garlic and onion, roast sweet potato, charred broccoli and roast royal blue potatoes, served with a jus made from the lamb juices and fats.
This is truly a 9/10 between all that slavic jank food
I gotta say, this is one of the best meals I've made in a long time. There were no weak links here. The lamb was cooked perfectly, the jus was surprisingly tangy and mouth watering, making me want to eat more, the potatoes despite how they look were crispy yet fluffy and infused with flavour having being boiled in very salty herb water, the sweet potatoes were very sweet, the green beans had unbeluievably amounts of flavour and are mealworthy on their own, arguably the star of the dish, and the charring of the broccoli really brought out all the flavour that it possibly had. I wish I had enough to share with you all.
