at your level i would advise you to not pursue openings which are very advanced. for this reason id recommend you to play just an italian with white and black, and play QGD against d4 and c4, just with a different move order against c4. apart from this, you can also play london as white, caro kann as black and french as black

at 1900+ theory becemes stupidly important

im assuming you're already very good with tactics and pretty decent with positional play

against e4 you can generally get pretty good aggressive positions with e5 (though it carries a lot more theory with at least Nf3, Nc3, f4 and Bc4 as main weapons for white and you have to be prepped for all of them) or after c5 (where with a bit of clever move order changes you can generally learn a little of theory in an opening like accelerated dragon)

ik c5 also has a lot of theory but you can just choose one big line as black and get just a broad understanding of others and you're fine

It's good you have big goals, but here are the main things you need to work on step by step

1. Playing longer time controls, and looking at the whole board (improves the ability to find moves and prevents blunders)
2. Tactics, everyone says that, and for good reason. They help with about every area of chess, and if you could bring your puzzles rating to around 1500, that would be great. If you want to do them for free I suggest using Lichess.
3. Thinking ahead from both sides. For making plans in positions, something I found extremely helpful at that level was to imagine I had 3-5 moves to play in a row, what would I do. After doing that, find a way to go about that plan, and for every move, look for at least 2 of the opponent's moves.
4. Analyzing games. After each game, look back on all your mistakes, and try to figure out what you could've done better, it will build up better decision making.
5. Studying one opening for each sides. Know basics of an opening that you like for countering openings, so you can start off the game well with a good position.
6. Look at your opponents plans. In a chess game there is two sides, both want to win. Your opponent also has plans, so try stop them, or at least acknowledge them. (This is learned through tactics and calculation, it will take more time to pick up on)
7. Learn basic endgames like pawn and king vs king, king and queen vs king, king and rook vs king and these will make it possible for you to win easily.

This will take lots of practice, and work. You should try to dedicate around 20-30 minutes a day chess if you want to improve fast, just make sure its not all playing games, and there is practice involved. The most important thing is to have fun!
