one thing i did for the waterfowl, and it isnt a foolproof strat, and requires you have quite a bit of stamina.
I basically pull out my shield with barricade AoW and block the first one, the 2nd and 3rd are pretty easy to get the timing on
and for the first ever waterfowl she does, try to keep your distance and fire some kind of spell to get her to waterfowl from a distance

Some do different things, in my experience Carian Retaliation on a light shield is the best for parrying, Carian Retaliation blocks incoming Incants and spells and turns it into glint blades, golden parry can be activated at a range, and thop’s barrier deflects incoming sorcery
