Theoretically Sekiro can last a while against all but Elden Ring's Ash of Wars that do wide attacks.

Otherwise Elden Ring has Bloodhound Step. While it is nerfed it's still the strongest version of the quicksteps with light roll first and second use. There's also bullet parrying and shields in Sekiro

In general Sekiro literally counters and punishes everything in some way, but in the case of wide ground attacks usually you're looking to jump and go airborne then grapple toward the big opponent doing the attacks.

that means the main weakness would be a human sized foe with wide attacks that can't be blocked with lingering effects.

And there's plenty of that in Elden Ring, and no dodge frames in Sekiro

Besides that there's Madness and Deathblight to Elden Ring.

That's a really tough question that only data miners could determine. Otherwise DS1 was slower and clunkier that I not immediately convinced it could be better, but just strong in DS1's pace. Pre nerf bhs was definitely better, but used fp. You had roughly unstoppable seemingly infinite dodge frames where being cornered couldn't kill you yet.
