I frankly tend to recommend DS3 over Elden Ring as a first player experience since its not quite as overwhelming but you'll do fine with Elden Ring as your first.
As goes with any souls game:

• If you feel you're dying too much, upgrade your health
• If you feel your damage is garbage, upgrade your weapon
• And above all, enjoy yourself

You can also grab 2 really nice talismans for dual spears in Liurnia:

• Winged Sword Insignia (Boosts multiple hits)
• Spear talisman (boosts counterattacks (pierce does extra damage if you smack an enemy while they're attacking, this is called a counterattack))

Grab the golden vow ash of war from Limgrave as well and put that on someting light like a dagger. Use it before the fight and it'll grant a nice boost to both damage output and a reduction to your damage taken
