Ds1 has great level design aside from a ton of questionable enemy placement, and has overall great feel and the gameplay is great
Bosses are garbage aside from like 2 or 3 however and we don't talk about ds1 2nd half
Ds3 basically threw everything that made ds1 and ds2 good and only kept bosses, focusing entirely on them
Ds2 upgraded itself from ds1, having the same but enhanced gameplay with massively increased variety and capabilities, while keeping decent level design and gameplay, while also offering alot more memorable bosses than ds1 and actual decent encounters

Strength is more for heavy weapons while twinblades are dexterity weapons
If you use spells you should do int but if not go arc that will help you build bleed
And if you use summons you might need to level some mind to get your blue bar wider

Yes. Ofc different armor sets do provide different damage and status resistances which can make a difference if you're really mix maxing, but not nearly as important as in most RPGs.
Your build is basically stats, weapons + talismans. Armor is kinda mostly for fashion. A few pieces have some special bonuses, like damage or stat increases, but those are rare and minor.

Stats don’t really matter, as long as you have 60 Vigor and level points that align with the weapon and upgrade that weapon, then you’ll be fine.

Those are straight swords, yes? That's fine too. Neither of those are particularly noteworthy and they depend on what ash of war / infusion you put on them anyway. But try to focus on one "normal" and one somber smithing stone weapon at a time and get them improved to as high of a level as possible.
