You can do that, sure. But in my opinion that doesn't really affect the merit of the game's difficulty, since you're completely negating the intended way of approaching the combat. im not saying boss movesets are not hard to deal with if you decide to engage with them
but the amount of options you have and can easily access to not engage with the boss at all means the game isnt hard imo

I think saying it isn't hard ignores the existing difficulty of the encounters if you don't approach the game in a manner that tries to avoid actually playing the game. I.e engaging with the bosses. That's like saying a game isn't hard because you can select the easy mode. Sure there are easy paths, but that doesn't mean there isn't difficulty to be found. So saying the game isn't hard because you can create these builds is even more untrue than your initial statement.
