The deepest you can go is 950m. The leviathan is at the top of the caves, you just need to not go too close to the centre of the caverns. Try staying on the edge.

There is no reason for Bulbo Trees not to be in the game
They left behind the item, the model is present, the code would've worked just fine copypasted from the original like they did with stuff like the Bladderfish
In general this kinda thing is the sole reason I can't like this game more than the original
So much of what I loved about the original was cut for no reason
Even if it would've made the survival experience too bloated the least they could've done was made them creative-exclusive or locked them behind some gate that required you to own both games
