I found hunger and thirst gameplay not-to-my-liking. Wasn't fun for me after a handful of hours. If you like the thought of worrying about finding food and drink every 5 minutes, or taking up big chunks of your inventory to carry some, then go ahead. But inventory slots are so limited, I didn't enjoy hunger/thirst gameplay. So I'd personally recommend doing the game mode without hunger/thirst... but you should still do the mode where you can drown from being underwater too long
