1. fish too large to pick up normally can be picked up in alien containment. When released in wild (outside containment) they can no longer be picked up. I don’t believe you can pick them up if released in wild.

2. I’m unsure but I believe that is correct. Can test by making a save and try then reload.

you can get sn1 first if you want, its in sale rn iirc and completed so youll have many more hours of enjoyment + youll understand every reference present for it in sn2
sn2 is like more updated, graphically better but it offers like 10h of gameplay only and requires still optimization for worse systems but its very fun and has improved a lot of things from sn1
