It chooses a random stone model/size when you place them down. It has like 5 different ones. The simple method is this:

(I'm assuming PC, but you can control it on switch too).
Go into decor editing mode (CTRL by default). Have slab in hotbar, press hotbar number for slab. Does the placement preview show right size? If not. Just keep pressing the hotbar number over and over until you get the right one.

I don't have a switch so I don't know exactly how it works there, but I've also done what you suggest too before. Some might even find that easier: just had huge stacks of slabs and then just mass placed them out, then picked the ones I want from there.

You can play kind of however you want here! There's skills like fishing, mining, farming, big catching, hunting, and of course decor making and such. You can also have the opportunity to play with friends on a smaller style "mmo" type game. Theres lots of lore and story within the quests, and the npcs are cool to get to know! There's bugs and glitches since its in development but it's also free so if you end up trying it out you know where to find us!

Yeah you can remove rooms in the housing menu once constructed as long as they are the last room on the end of the structure- what I mean is you cannot remove a room between a harvest house and another room so that it becomes standalone if that makes sense.
