Every system has a particular set of rules and conditions applied to data entered into it. If you know what your AI (program) needs to be fed, then preparing a healthy meal for testing should just be a matter of generating that good data, and throwing in lots of 'fibre' (bad data) to test that the system can digest it without killing it (crashing). Check its exception handlers.
PS don't use AI to generate test data for another AI.

Maybe tree structures with pointers or alternates, array maniipulation, recursion, stack manipulation, dynamic storage, tree sorts, insert sorts, merge sorts, tree searching, file io using fixed length records and csv. For a second wave, pull in a DB system API and learn the basics of SQL, and CRUD with DB records through a programming language.
Oh and string manipulation, is essential, cutting and chopping and searchin through strings.

These days everything is online. The sorts and searching are all just standard libraries. You only really need to know how to do this stuff if you are without internet on a desert island and need to build a comms system to get rescued. kind of sad but its a reailty. Knowing some basic file I/O is always essential, as is memory manipulation, which you will need to customize for yourself. Any scientific algorithms etc will depend on formulae you have for your problem, and these are the fun little loops etc that you need to do for yourself.
Oh and an algorithm to remove scum from the start of a sorted Google data stream.

Nice example. I guess I'd see this as part of parsing things, which is good to do as a learning experience, even if you often have a library in practice. To be familiar with regular expressions, or having written something to parse csv, or xml, or map coordinates from Google or similar gives an appreciation of how these things work, and maybe also what's needed to do them efficiently (either latency or memory).

I guess my suggestion of such as "gradient descent" is for those with a more mathematical bent, but looking at optimisation, including path-finding or similar is good to know how they work. I do still think it's worth knowing how libraries work for oyu. Sometimes you have choices and one will work way better than another, eg memory use or faster, or affected by biases in the data used in your situation.

Once you understand a language, its not too difficult to move into starting another. Java and C are reasonably close with the basics, so its just a matter of learning the differences. The bigger difference for you may be in potentailly working on whole of system applications. But that's just an assumption that I hope is wrong.

USACO guide is good pick up a topic and solve like 20problems from different online judges like codeforces , cses , SPOJ on it if u become comfortable pick another topic and so on i would recommend CSES because it has limited so it encourages u to continue , beside the topic u can go on virtual contests or any old contest in codeforces from time to time and try live contests too if you are not interested in competitve programming then skip codeforces and try leetcode . keep solving as a habit and you will become beast in algorithms and problem solving this will take time so be patient
