Stars are so far away they are more likely to be affected by atmospheric conditions, I've had moments when I look up at the night sky and some days it's dimmer than others

You'd get a bigger variation if it was eclipsing, it's an ellipsoidal variable though so does vary by amount a mag
There's a lot of tools which can do it but the basic idea is photometry. you take an image of the star and do normal calibration with darks/bias/flats, subtract the sky background of the image, add up the number of counts in the pixels that the star takes up, convert to electrons per second and take a logarithm to get an instrumental magnitude, compare with reference stars nearby that you know the magnitude of to determine the apparent magnitude
