There aren't really any good offensive pets. There are mounts in mythic mounts mod. But they die easily. Best offensive summon would probably be Sword of Freyr. After that, you have the Prime Skelt from Archon. And then there's wolves which can have armor (wolves with armor mod) and that armor can be enchanted.

The Prime Skelt you can give armor to and it will inherit the stats and enchants on it so you can make it an off-tank. Wolves with fully enchanted armor can be considered tanks. And Sword of Freyr is by far the easiest and also most offensive because it is a sword that fights on its own.
