If your tokens are locked no one can touch them until they are unlocked. With the implementation of V2, you should be able to change your wallet, That is if the thief hasn't withdrawn/unstaked your tokens before you migrate.

No. You can lock as lomg as you want or stake in the flexible pool without locks. Locking longer will increase your token weight and gives you more rewards
