Those are ethereal illuvials. What Are Ethereal Illuvials?
Ethereal Illuvials join the real Illuvials in combat but disappear when defeated and cannot be captured under any circumstance.
They populate encounters looking slightly different from real Illuvials but behaving identically until vanishing upon defeat.

That's a solid plan, makes gathering a lot more efficient with supreme gear, get some decent Tier 0 use consumables on them and start building up your Tier1 rooster and prepare for Stage 2 regions.
