I don’t worry about calories. I just eat till I’m full twice a day. I don’t ignore fats and I eat my meats and eggs. I do not go out of my way and add large amounts of fats to my meals like carnivores. I just don’t ignore and cut it out like most people if that makes sense

Mix until uniform. - Target dough temperature: 77–79 °F (25–26 °C).
Bulk Fermentation
- Perform two stretch-and-folds 30–45 min apart.
Keep dough around 75 °F (24 °C). - Let dough rise 40–50%. It should feel smooth, elastic, and slightly jiggly.
Bulk time ≈ 4.5–5 h @ 74 °F (23 °C).
Pre-Shape & Shape
- Divide into two pieces ≈ 850–900 g (30–32 oz).
- Round lightly and rest 15 min uncovered.
- Shape into tight boules or batards and place seam-up in floured bannetons.
Cold Proof
Cover and refrigerate 8–10 h @ 38–42 °F (3–6 °C).
Baking
Dutch Oven Method
- Preheat oven and Dutch oven to 485 °F (250 °C) for 45 min.
- Score ½ in (1 cm) deep.
- Bake 25 min covered + 25 min uncovered @ 475 °F (245 °C).
- Crack oven door for final 5 min for extra crust.
Open Oven Method
- Preheat baking steel or stone to 500 °F (260 °C).
- Add tray of boiling water for steam.
- Bake 20 min with steam + 20 min dry @ 475 °F (245 °C).
Notes
- Use damp hands during mixing and folds.
- Lightly flour only when shaping.
- Aim for internal bread temperature 205–210 °F (96–99 °C).
- Let loaves cool at least 1 hour before slicing.

Getting it down to a science. The secret is dry those wings out in the fridge over night. I use a very special seasoning
What do you mean with "dry out"?
Whenever you buy chicken at the store do you ever notice how wet the chicken is when you take it out of the package? Most chicken has retained water. And that moisture prevents the skin from getting that perfect crust. You have to dry it out. Pat the chicken down with a paper towel and put in the fridge for 24 hours and you’ll notice all the moisture is gone after. I add a seasoning as well. You can just use salt. Salt is next level. That’s called dry brining.
The seasoning I used is salt, sugar, garlic powder, paprika and onion powder. You can get by with just salt tho. Also you want your food dry when you deep fry cuz water and oil do not mix very well. I always bring my meat to room temperature now as well before I cook.

1. **Mix dry ingredients**
Add flour, salt, and dry milk (if using) to the mixer bowl.
Mix briefly on low to combine.
2. **Add liquids**
With mixer on low, add:
* Melted lard
* Honey
* Warm water
Mix until a soft dough forms.
3. **Knead**
Knead with dough hook on **speed 2** for **4–6 minutes**, until smooth and elastic.
Dough should be **soft and slightly tacky**, not sticky.
* If sticky: add 1–2 tsp flour
* If dry: add 1 tbsp warm water
4. **First rest**
Cover and rest dough **45–60 minutes** at room temperature.
5. **Portion**
Divide into **12–14 balls** (about 45–55 g each).
Lightly oil, cover, and rest **15–20 minutes**.
*Optional but excellent:*
Refrigerate dough balls **12–24 hours**.
Bring to room temperature **25–30 minutes** before rolling.
6. **Roll**
Roll each ball to about **⅛ inch thick**.
7. **Cook**
Heat a dry pan or griddle on **medium**.
Cook each tortilla:
* 20–30 seconds → flip
* 20–30 seconds → flip
* 5–10 seconds to puff
Total cook time: **60–90 seconds**.
8. **Hold**
Stack tortillas and wrap in a towel to keep soft.

No, they would not be vegan. It is a baby chicken. However, an unincubated egg embryo has no brain activity and feels no pain. So far the first brain activity has been detected at 6.5 days after the egg has been sat on by a hen or put in an incubator. They start looking a bit nasty before that though. If I were buying from someone with a rooster I would ensure they collect daily.
The fact they tested brain activity in chicken embryos is simply mind blowing but shouldn’t be I guess lol

Wagyu is interesting. Genetics inbred for years, along with high calorie feeding, keeping them from too much exercise and then keeping them tame so there is no adrenaline released at slaughter. People underestimate that last one actually. It's why I do on farm slaughter. My steers are more tender because of it. Hard to find true Wagyu in North America, most of it has Angus blood mixed in and isn't as restricted in movement.
I have eaten Wagyu and dislike it but tbh I don't like animal fats unless they are like tallow for French fries. Well, except bacon. Everyone likes bacon.😂

- Get a 4cm thick cut
- tap meat dry with paper towel.
- Dry brine using salt 0.5% of weight for 24 hours, leave open in the fridge on drying rack.
- Take it out from fridge for 30 mins.
- slow cook it like 175F in the oven to reach 132F for medium rare or 142F for medium.
- Rest for 10-15 min.
- Ripping hot pan or grill.
- Sear for 15 sec each side. Rest a minute.
- Sear for 5 sec each side.
- Lower heat, put garlic until slightly brown, add Butter, then Rosemary. Baste 10 times each side.
- Rest 7 minutes.
- Separate the cap from the eye.
- Cut against the grain, get rid of the gristle.
- Serve.

So no deep frying this time (deep frying is the best option but I need a break from fried food been terrible this past week. Arby’s was my cheat meal💀). Steel pan with a little bit of avocado oil, bottom rack of oven at 425. As soon as the wings unstick naturally they are good to go. Should take around 30 min. Also, I was told if you aren’t deep frying use a bit of baking soda. It causes the skin to rise and get even more crisper. Let’s see

most milk in the shelf are at least pasteurized for chilled milk, and UHT for long life milk. it is actually mandatory.

@sick vessel dogs don't have the ability to break down lactose. So people who feed their dogs a ton of milk can deal with diarrhea and upset stomach. It is also high fat and some dogs can get pancreatitis from high fat. Smaller amounts can be good for them though, especially colostrum.
