I understand there needs to be some long term goals that are for the sweatiest of gamers but this game feels just a touch unapproacable in terms of what you get out after hours and hours of play. Check every item you need/make carefully.
At the top of each item there is a bar for its tier.
Tier 1 = stage 1 run
Tier 2/3 = stage 2 run
Tier 4/5 = stage 3 run.

Naturally you can find some chrovium in stage 2. But only celestvium in stage 3 runs. Using this as a go to should work alright.

If there is no bar, like for bolstering essences, its a tier 0 item so Stage 0

To get started T0, then get a few T1 S2/3 in stage 1 area. Then go to stage 2 for some T3 T4 stage 2. And then abandon those stages and only farm stage 3 when you have 8 decently strong illuvials, complementing affinities/classes and a cost of 450-500.

You can think something like: 3 fire, 3 air, 2 magma | 3 fighter, 3 psion, 3 bulwark, 2 behemoth. Or something like that. Yeah?
So two primary affinites/classed and a composite for each would be plenty for stage 3 encounters.

Jelly beans on psion usually but i like them on Volante as well.

I like the psion one, (stage 0) equip it on your ranger in [i] and you can use it in the overworld.
In the arena, just use one that complements your team. Press the + to get one class/affinity from an illuvial. So if you have magma arcanite in Scoriox (psion + fighter) and it is fire dominant and Fighter dominant, you want to use an earth psion ranger.
Fire dominant + earth = magma
Fighter dominant + psion = arcanite.

And yes ofc you can make a high tier weapon for in the overworld. I just dont need em and breeze through dtage 3 overworld runs as well. Chasing down illuvials is easy, using Hilde (press F) and a psion gun (press G) when equiped ofc

Dominant just means what underlying affinity/class it works with. Your ranger taked that trait, and you get that trait in the bars to the left diring a battle.

Each illuvial has a dominant trait. And the bonuses apply for that one or half as well for the other bonus.
If you catch a stage 2/3 illuvial, just keep an eye out for dominant 👍
