It's doable I think, but it kind of depends how they've created nature in the first place. In GTA V for example you can play as animals, because they use a similar traversal system as the main characters. But yeah it'd be limited to animals that exist already in the world, I don't think they'd make every animal. I don't expect it to be in the game though, but it could be done.
