there isn't a way you can track them (at least not one I'm aware of). you will just randomly encounter them.
I'm positive they do respawn in the same area you kill them tho, so if you find one and kill it, you can just revisit the area later to find a new one

FYI for completionists missing side quest(s)

Ran in to it just there looking for the last side mission to complete.

Then I realised I had talked to a lady in cragcroft about clearing an encampment of a certain infamous foe, but I had already cleared that previously when I was ticking off infamous foes.

Because I killed the foe before engaging her the quest never appeared and only cause I remembered where she was I was able to go back and talk to her , get the reward and complete the "missing quest"

I realised after this could apply to a few side quests around the region's where you may have cleared the dungeon or foe/collected the item before initiating the quest depending on how an individual goes about completing stuff.

So if you are racking your head for a missing side quest just have a stroll through the hamlet villages and look for an npc with a white dot over them it's more than likely them, once you talk to them it will complete

I got severely sunburned - resulted in 2 weeks off because could not move.
Once the sunburn healed I went blind in my right eye and currently having that treated
2 days later I was in a car crash
2 days later i had surgery

covered my bandaging when i shower but the other day water go through and soaked the bandage and it fell apart. Salvaged what I could of it but it's not enough pressure.
