food consumption doesnt matter, if you click the farm in your hq it will give back anything you lost
iirc riders are like 75% faster than shooters and fighters which are 2x as fast as cars
load you can see if you go to train and click on the name of the troop
If riders are your only t1 you will autosend riders, so train like 150k and your farming woes will dissapear
