Companion mode glitches out sometimes. You need to disable companion mode and re-enable it. You should have a yellow whistle commands menu when interacting with your companion. If it's not there you need to disable and re-enable companion mode and try.

Yeah the easiest is the parasaur. The one that honks. They generally will run from you so easy tame. You can ride and shoot from but they are weak so keep an eye on their health and run away if it gets low
