there's an irony to the fact that I talk about how my "zen garden" every day is centering and a nice routine and makes me appreciate the complexity of simple coffee grounds, all these little grains tumbling, a tiny facet of chaotic systems showing me there's transcendence in the mundane

and then the substrate of this zen garden I rake and tend to, the sand itself, is a dried bean I will shortly be forcing water through at an unnatural pressure to maximise the amount of psychoactive stimulant drug I can extract from it

it's a type of coffee fermentation! it produces some really lovely flavours. googling it says anaerobic processes tend to give fruity & wine-like flavours and that tracked with my experience
