It was hard to manage on the side with a proper job as well

im shooting making coffee on a gaggia classic pro with a gaggiuino mod, with a turin df64 ii grinder
beans are typically bought from a local cafe roaster every 2-3 weeks
i use whole milk
i mostly drink flavoured lattes, mochas, americanos
a future project would be nice to create a cafe, dedicated to media creatives
that would be fun

Didnât work but it was really fun while it lasted
Thatâs basically a decent tho
Decent isnât dual boiler either. It has two pumps so I can do temp profiling, but honestly usefulness of that feature is very limited

it uses like smart technology to be able to utilise different temperatures efficiently
its cool
its probably a lot faster than mine though
i need to wait a lot
Itâs pretty fun to do temp profiling, and I think it helps a bit with stability in general, but Iâm sure itâs way past diminishing returns
to be honest i dont have enough time anyways to mess too much around with espresso, i just like the fact its able to consistently deliver good results and that keeps me content
if i get the free time to be wasting spenny beans then yeah
i would try, but right now all the different sliders n stuff on my mod make no sense to me

this was a siphoned anaerobic coffee at the "ottoman coffeehouse" here which is PHENOMENAL
they do a bunch of specialty coffee and the clarity of this siphon brew was pretty unreal

there's an irony to the fact that I talk about how my "zen garden" every day is centering and a nice routine and makes me appreciate the complexity of simple coffee grounds, all these little grains tumbling, a tiny facet of chaotic systems showing me there's transcendence in the mundane
and then the substrate of this zen garden I rake and tend to, the sand itself, is a dried bean I will shortly be forcing water through at an unnatural pressure to maximise the amount of psychoactive stimulant drug I can extract from it
it's a type of coffee fermentation! it produces some really lovely flavours. googling it says anaerobic processes tend to give fruity & wine-like flavours and that tracked with my experience

and I bought some coffee back to make at home
I bought beans from a Thai region called Galayani, very bright and the right balance of acids, medium-light, blessed to be in a country that is capable of producing it's own coffee and amazing quality coffee at that
also having it with a side of runny scrambled eggs

But tbh Iâm more concerned about consistency
friend at work owns a cafe that hasn't been operational in a while, who knows, might be my next passion job
I went to their opening day, they gave everyone their first coffee entirely free
So I ordered their batch filter and a flat white
Both were amazing, but the owner was making the drinks
After a few days their employees started making them
And it just wasnât as good
Beans over extracted and milk was almost burnt and too frothy
lots of time investment in making sure people know how to make coffee
Yeah, real big investment
lady at the cafe, she's got a weak tamp, you can taste it, it's frustrating
but unless you bring it up and keep supporting their efforts you'll never find a cafe you like
or, well, maybe you will, but maybe it'll cost a bit more, and be a bit further away
Thereâs this one cafe which is very popular purely for aesthetics and that they sometimes make good food, but their coffee is actually wank, and they usually have queues that go 10m outside the door. I dislike people who go to places purely for aesthetics.
And I bring this up because they use old beans
yeah, it sucks, but business is business
I went in one time to ask what beans they used, they shown me the giant bag, and it was like 6 months after roast date
And their consumer bags are 3 months after roast date
But the coffee roaster cafe I go to have fresh beans weekly lol
They sell out every week
I got to know a cool guy who operates a cafe, dollar coffee, amazing cup quality lattes for the price
no idea how you even make profit charging that little for coffee, milk alone is basically a dollar
This sounds fun, and tbh Iâm at a stage where I could probably part-time photography and could look into a cafe job as well and thatâll just be me full time for a while and be comfortable in life.
