In my experience, Knife is really only amazing at stealth resets on Zealot with Invocation of Death.
Generally I'd much prefer to use something like a Crusher, Heavy Sword, or the likes.
The benefit on Psyker is immediately obvious due to their Blitz and Staves being able to stand in for a lot of melee functionality, or even if you're just using Assail, it covers for being able to engage into big blobs of enemies. The dodges accentuate the benefit on Psyker, who wholy relies on just not taking damage in the first place.
The main point between Veteran and Zealot is that a lot more of the Zealot tree is dedicated to melee, meaning it is 100% your main tool, whereas Veteran as build leeway. Zealot is sort of pidgeon hole'd into a way to play.
Generally, Zealot will often just do better with any other weapon with their insane base dodges and movement as is as well, whereas Knife movement is immediately of huge benefit to Psyker and Veteran; Vet also has nade regen Shredders for the sake of density while keeping their ranged weapon free for choice. Zealot has Immo Nades and/or Flamer.
Knife Zealot is not weak, not at all, but Knife has higher immediate benefit and further use cases on Psyker and Veteran.

All toughness regen revolves around heavy attacks which is why the Ogryn always has to spam heavies.
Unless Fatshark changes those two toughness regen nodes, Ogryn fighting will never change.
