The spy games sneaking aboard the Prydwen and then later freeing the synths was something I really liked. Plus I loved the personalities of the Railroad named NPCs and loved the little run-in you get with Glory during one of the later side quests where she's like "wow they sent you here too huh? team up time" and you blast through the base together

Brotherhood is kinda fun too but I remember hating that dumb speech check for Doctor Li so much. She's left the Institute and refuses to work on Liberty Prime knowing full well what Maxson is capable of if he gets his hands on a fully functional version 2.0 of it, and you convince her by saying "do I need to remind you why you left the Institute??" with no further fight or fuss from her LOL it's so lazy. But at least unleashing Liberty Prime on the Institute and attacking it with the Brotherhood of Steel was fun, and most of their quests are fun too

Big Mountain was the highlight of the DLCs for me. I loved it most just for all the wacky science and shenanigans. The voice actors seemed to have a lot of fun recording the dialogue too.
