honestly nothing notable, benās bread nearby in phinney stocks proud mary (but serves stamp act), herkimer is also up on the ridge but roasts darker than my preference
thereās good food but coffee leaves a bit to be desired
Made a friend up there and we've got a group planning to meet for coffee and everyone said they were in but nobody knew anywhere good up there and said the coffee was mid at best everywhere they tried
Maybe just go to retreat and get a tea if you want to be on the lake, otherwise I'd go to bens bread but mainly for the pastries
santo coffee in roosevelt has good reviews but I've never tried it
Santo is pretty good but not near by

layers has a custom blend i think from stamp act? the one named after their ex-truck
taiwan is pretty coal, oasis is the best iāve had and i didnāt enjoy it much. hong kong you can look at oma or red meow
Next time go to Pacha collective on Woodlawn and 72nd. They have some decent light roasted offerings, I got an Ethiopian there that was a little bright and complex

Not sure if anyone is interested, but I have a stupid amount of coffee from Current in the Philippines (about 20kg). It was for a sub order and was supposedly destroyed by customs, but showed up after I had refunded people. It's not really good, but it would be good for seasoning a grinder or maybe making a cold brew? I'm down to sell it for $5/kg just to get rid of it haha. Currently selling some to normies at my warehouse, but I still have more

If you want something really obscure, I think you can find Vashon Island Coffee Roasterie around town, they're really good for darker stuff.

vashon is the same guy who started seattleās best. he has some unusual ideas about coffee, i think he was calling it ānordic roastā based on his own ancestry

Yeah, I remember when it was Seattle's Best. My late wife lived on Vashon while it was still Stewart Brothers. The side of the building still has the old Stewart Brothers sign.
I usually get it at the roastery when I visit Vashon, so I don't really keep track of where I see it.
Well I tried both PCC and Met Market but didn't find it. Picked up some Olympia instead. I did see "Nordic roast" on the Vashon website LOL Didn't want to go into Seattle or West Seattle - I think Thriftway has it.
Yeah, West Seattle Thriftway is likely to have it.
There's also the Vashon Island Orthodox monastery coffee, which is also good if you like dark roasts, but the only place I've seen it in town is the Leschi Market.
I'm debating taking my kettle, orea, and zp6 on a 2-day trip to Portland. Mostly because I have so much coffee already

Honestly Iāve found it kind of depends. Like that natural I showed is a Marshall variety from Peru. Iāve had slightly more developed eth washed. I say just got with what youāre interested in and grab a couple

Iāve found it varies but there is a thematic band of roast level. Processing ofc changes the perceived color as well
Which coffee was it from h & s? Shoebox kinda goes back and forth. Last year they had a bit more development (not in a bad way) and this year they've been quite a bit lighter (not always in a good way, but often good still). H & s has been really good this year imo. He has an odd roasting style, but it's usually very light (but not as light as shoebox always)

I have the Gitega 861 waiting for me once I finish this bag of shoebox though so weāll see!
Cozy monster is more developed than hydrangea. Not ul, but can be dialed in well

I think thats partially a green thing. I have the same coffee. It's light, but not nearly as light presenting as the other coffees I got from him recently. But I've had other roasts from that washing station that were similar
I've admittedly not had hydrangea in a bit, so I'll need to try them both again to compare lol

Keep us posted! Iāve basically stopped ordering new bags so I can try cozy monster because my backlog got wildly out of control (and thus so did my caffeine powered anxiety) 
Thereās definitely overlap between what Iāve had of cozy monster and hydrangea, Iād say on average hydrangeaās still a little lighter

I went to roaster works to roast with a friend (and also to see if I'd be interested in using anything there), but I wasn't interested in any of the machines. If cozy monster ends up opening a co roasting space (he's talked about it), I will 100% start roasting lol

I had one bag that was kinda roasty (in an american light sorta way) but not bad. But thats my only sample size. He brews beautifully though, so I know it can be dialed in really well. He brews pretty differently compared to me

on a different somewhat locally relevant note, et yemen pairs really well with spinnaker's oatnog chocolate bars that they're currently trying to get rid of on discount via toogoodtogo. the choco and spice aspects of both reinforce each other nicely

Anyone got any tips for dialing in H&S, not getting remarkable cups with my v60 & zp6. Usually rock with a bloom + 2 equal pours recipe. 2-2:30 brews
What ratio/temp? Probably do more pours and/or a longer ratio, but not sure what you're already doing
1:16.667, 205f-ish
H&S can be odd, I feel like it doesnāt respond well to agitation but can take aggressive ratio/temp extraction parameters. I usually start with the Gabi at 1:18, 90 degrees, pretty fine grind.
without a drip screen, maybe try just 1-2 pours
you think break out the melodrip and go super fine, super hot?
yeah, you might not even want to go that hot to start. just push ratio
mr. h&s does qc at altitude with a gabi so i think his base brewing parameters are just kind of idiosyncratic

An ecuador gesha from el dorado and a colombian gesha from someone I can't remember. He told me the Colombian is possibly his favorite colombian coffee ever, so that's the one to go for imo (from me or him lol). Both are double ferment washed

I have a friend who's a very skilled baker & chef who's considering working there but she's not from seattle and I'm unfamiliar
sea wolf does good pastry. a lot of the more respectable shops in north seattle source from them. their coffee is also surprisingly well dialed for how coal it is
canāt really speak to working conditions or anything though
dale from root was legitimately proud to be working with them, and heās a fastidious guy

Solid pastries and from what I know a solid place to work. I don't know anyone who works there, but last year the workers formed a union for better wages and some other things and the owners were supportive and didn't screw them over (at least how it seems from the outside), which is legit a rarity in the city

Any more luck on the H&S? Iāve just recently had two coffees from them that were surprisingly developed. Theyāve been nice, but I havenāt been blown away either.
Giving it a few more months worth of subs because itās likely that maybe those werenāt my preferred style of coffees
I think pushing the ratio helped the most tbh, cups have been better at 1:18
went to a cafec fast filter and got the brews around 3 mins with 4 pours
good cups, really delicate, sweet and layered
I think I get the hype, the beans can just be a little fickle
My experience so far as well with H&S sub coffees which has been weird because the H&S coffees Iāve had through Airworks or ordering myself as one offs have been incredible š

Not coffee related, but I'm downsizing my library a bit. Planning to put most of the books in a little free library, but if anyone wants more books (mostly lit fiction), I'd be happy to give them to you. I've got some Kafka, coetzee, Han Kang, BolaƱo, Rulfo, Bioy Casares, etc. Admittedly not my favorite from any of them, but not bad books š

I'll set it aside for you š it's not one of his more popular books (I had a bunch, but idk where they went lol), the only book I have from him is Foe, which is kind of a reworking of Treasure Island (which I never read lol). It's good, but not as strong as most of what I've read from him

It's a very warshed coffee lol. Held in cherry/clean natty vibes. But in the best sense imo. Not always a fan of that, but it worked super well here
taste notes of wush wush often seem to have something like "watermelon", i'm super interested although I haven't got the chance to try one yet
the producer is one i'd trust based on past experience. maybe fermented wash coffee but should be relatively clean
wush wush is probably the most universally funkmaxxed of all varietals. iāve only had one truly washed version which was a very different experience to any other wush wush iāve tasted, kind of like tibetan tea with butter
something about it just makes producers want to do the craziest advanced fermentation dank protocols they can devise

i think chirosos in general have cleaned up a lot this year. i usually found them to have kind of an indistinct funky flavor even when washed, but a bunch of the ones iāve had this year (including that sey ortiz) have a nice distinct kind of gatorade vibe

Honestly, looking up a list of what cafes buy CC and Dak would not be a bad way to make a list of cafes to try while traveling
If a cafe imports those guys, they probably have well above avg coffee
That is one of the things I look at when traveling - search the shop photos and see what's on the shelf. Looking at stockists for specific roasters is a great idea.
I use Sprudge and Reddit, should probably look here too.
Interested in what others use as well
i used to look for coffee nerds in the area on instagram and see where they were going. there's a lot of shops that dial mediocre coffee really well or cycle through roasters pretty often, so i think seeing which ones have cultivated a community of coffee nerds is the most indicative way to find something good
these days though i just settle for a hot liquid in a nice space that keeps the caffeine withdrawal at bay

has anybody been to the one in mill creek run by the original mr. teriyaki? always wondered if it's worth the trip
Owners are super nice. It's definitely good, but don't know that I'd make a big trip for it.
Yea its good, but it's still teriyaki at the end of the day. I like how juicy/tender the cuts are. Side note - I find the cole slaw a bit weird and I actually like slaw lol. Opening hour window seem to be getting a bit slimmer as the years go by, I feel he may be retiring soon so it may be worth trying to just say you had some from the OG himself.
Also I just found out this thread existed, nice to meet everyone.
I've been using tap filtered through a Brita for my machine. We all know how good and super soft our water is, mine is specifically at 21 ppm. I asked LM a few years ago who mentioned that using our tap with a Brita should be good enough - just to get rid of any chlorine/odors so I haven't thought about it since.
Recently learned that it could be pretty corrosive.. anyone have any thoughts? What sort of setup are you guys running? RO + Remin setup seems with how good our water is, but definitely don't it eatting my boiler lol. I do both PO + Spro
Actually just started ditching my brita for a zero water. Some deep diving led me to realizing the brita makes our water extremely acidic (ph 5.5-6). I noticed this like a year ago with water strip testing but didnāt fully understand what caused it. But yeah my cups are night and day from that change.
The reason from what I understand is the brita strips minerals by replacing them with H+. As the water then absorbs CO2 it becomes even more acidic. Yesterday I ended up testing the brita water vs zero water and distilled and yeahā¦I canāt go back 
Fwiw if you have a ton of brita filters like I do - you can run tap through the brita and then that water through the zero water. Extends the life of the zero as well because the brita cuts the TDS in ~half
What are you using to remineralize?
our water isn't so soft that it leaches metal ions or anything
personally i and a lot of other people here just use straight tap
if i was going to modify it i'd probably harden it
interesting.. yea I should get around to getting some test strips. I haven't bothered to test aside from this TDS meter I had laying around. For PO I just use straight up tap, but I've started testing distilled + a third of TWW to see if it was worth the effort.

@manic portal when I checked our tap is heavy in KH (more than I prefer) but not GH. So because of that Iāve just resorted to zero water and remineralizing from there.
But I also just really enjoy testing and comparing so this is fun for me. Iād be doing it even if our tap was perfect š¤·š¼āāļø
Next is exploring dry minerals vs. liquid concentrates but I need/want to get through this stuff first š
are you keeping the coffee the same? or testing different coffees with different waters?

Got some wheatgrass ptsd at the april meetup from another more rested bag of the same coffee 
Intensity is not that strong (maybe cause I'm using 1:17.5 ratio, or it needs more rest), but no wheatgrass

The only thing thatās worked so far is doing all that with tsibarist fast filters which brings it into the realm of normalcy for regular papers lol.

i'd go down in pours too. newer shoebox ime can take like maybe a 4-5 minute brew time but 9 is too much
you can always try it all the way at the opposite end of the brewing approach spectrum (something like medium grounds, one minute bloom + one pour at ~7ml/s) to see if you can get it into fast mode
i haven't had this one but just going off the notes it kind of looks like a coffee that wants high extraction tho

T-83 for light, T-92 for dark, T-90 when you don't know what to use

nah, one pour is low extraction. iād just try it out at both. my 100% uninformed vibe check is that it wants a more aggressive approach, but try it and see
the roast level thing i think makes sense for osmotic flow where you wonāt get a ton out of a light roast without help. but i donāt know if anybody besides mr. cafec truly understands osmotic flow

Iām also curious if ānewerā here means not rested or if heās changed roast styles recently. I figured 6 weeks was enough rest time for this but maybe not?

Try high flow rate with less agitation, 4x pours instead of 5x. I've never had a brew from them go over 5 min. I aim for 3m for most of my brews too. The Mario hervas mejorado I had from them a while back was kinda stally and needed to be ground a bit coarser, but still finished under 4m. I use hario tabbed filter usually. My zp6 never generated that many fines, but I also kinda hated it so I barely used it š but maybe yours is generating a lot of fines. You're using a v60, right?
I've been doing 8 weeks lately. Their roasts have been lighter as of late (though I had some from around that time that are already ready)
to me an unrested roast tastes like 1) actual grass or 2) kind of an unfocused, blurry version of a specialty coffee. hard to explain the second one but when i brew and nothing is obviously unusual, i have some expectations about the flavor and when theyāre not met i usually guess underrested

Iād give the T90s a shot Jehu I donāt think rest is the problem as far as stalling, but I only say that because I open a lot of my shoebox around 2-4 weeks. Unless the problem youāre trying to deal with is youāre getting a bunch of grass notes? When I was waiting for my Z2 I was using a ZP6 and never had stalls including with that same coffee fwiw at 5.5.
My baseline brew for every coffee is 1 bloom, 2 pours, 15g/250g.
1st pour 50g
2nd pour up to 150g
3rd pour up to 250g (gentle swirl)
Flow rate is about 5-6 g/sec around 4ā from the bed. TBT is always 2:30-3:30 depending on the coffee. Really hope this helps 
I also got the impression that washed mejorado is prone to stalling. A previous one from sey is super slow. My current la papaya from hydrangea is the same.

I had two Campo Hermoso coffees. Very good, but heavy on the processing flavors.
yeah, that's what you expect from campo hermoso. My colleague also said the same about the IPA gesha earlier
we ordered two other cups today, a natural costa rica, a washed janson. Those two were nice.
It is a little more developed light roast, probably to focus more on the sweetness
but it is still nice at lower temperature

lol I ordered from a very nice young man who did not seem up to the task of doing a $15 pourover, luckily joe seemed to feel summoned and popped out from the back to do it
he posted about hiring recently in a way that seemed tailored to getting someone who knew their stuff so maybe he'll have a backup
I have to say their pourover is on the pricey end (considering the coffee they use)
although last time the three cups we ordered were brewed well enough
I get coffee at cafes like once a month tops so Iām maybe the least price sensitive consumer, I have no idea what the going rates are

My Seattle peeps, Iām gonna be in your area - U district - this afternoon. Can someone tell me where the really good modern flavors coffee shops are? For comparison Iām from the Portland area and I like PDx coffee club, slow haste, and Sometimes coffee.
Ancient Gate is probably your only chance in u district
If you want tea though the youāre in the right spot
It doesnāt have to be university district, it could be somewhere north or south of that, we will be around that area, but have some flexibility if there is a place similar to the shops I mentioned
seattle is kind of weird in that all the places where there are decent coffee shops are also the ones that are hard to get to
the usual recommendations are homage in ballard and daymade in pioneer square, both pretty far away from the u district. besides ancient gate, the closest specialty shop i can think of is analog in capitol hill (a train ride across the cut)
ancient gate is pretty aight for a seattle shop tho
Santo in Roosevelt is the next easiest decent place I can think of
