Any recommendations in Greenlake?

slim shale

for coffee?

exotic yarrow

Yesss šŸ™‚

slim shale
#

honestly nothing notable, ben’s bread nearby in phinney stocks proud mary (but serves stamp act), herkimer is also up on the ridge but roasts darker than my preference

#

there’s good food but coffee leaves a bit to be desired

exotic yarrow
#

Made a friend up there and we've got a group planning to meet for coffee and everyone said they were in but nobody knew anywhere good up there and said the coffee was mid at best everywhere they tried

azure olive
#

Maybe just go to retreat and get a tea if you want to be on the lake, otherwise I'd go to bens bread but mainly for the pastries

#

santo coffee in roosevelt has good reviews but I've never tried it

fickle nexus
#

Santo is pretty good but not near by

azure olive
#

Neither is bens bread but the coffee situation in greenlake is just that desperate

potent stump
#

Does anyone have any local roaster recs for Taiwan or Hong Kong?
A friend of mine is looking to get coffee there

manic portal
#

best coffee around green lake is possibly the drip pot at PCC

#

real answer is probably layers, they have some kind of stamp act situation. or zoka in tangletown. or just write it off and go to retreat for the space

slim shale
#

layers has a custom blend i think from stamp act? the one named after their ex-truck

Never been to Story Coffee, but it's not far. Time to check it out

With the cross lake section of the two line opening soon, it’ll be pretty easy to access via light rail

Not sure if anyone is interested, but I have a stupid amount of coffee from Current in the Philippines (about 20kg). It was for a sub order and was supposedly destroyed by customs, but showed up after I had refunded people. It's not really good, but it would be good for seasoning a grinder or maybe making a cold brew? I'm down to sell it for $5/kg just to get rid of it haha. Currently selling some to normies at my warehouse, but I still have more kekcry

Heading to SF tomorrow and want to take some local beans for a friend. He likes traditional Italian ristretto type stuff. Any thoughts on what I can easily grab today?

manic portal
#

probably vivace

comes with that special stamp of schomer approval

#

i think lusso gmc is a better local trad roast but idk if you can pick it up in person. maybe seattle coffee gear stocks it

#

vivace is more of a "special seattle thing" though imo

spice pelican
#

Somebody brought cream doughnut to a previous meet up and now my whole house smells like cream doughnut

long finch
#

Yeah he went to Vivace when he was here so he might have picked some up. Might see if Lusso is carried anywhere Eastside. I know the roaster is in Redmond but probably closed today

long finch
spice pelican
#

I have my reservations

#

But maybe I'll grow to like it

native jackal
#

If you want something really obscure, I think you can find Vashon Island Coffee Roasterie around town, they're really good for darker stuff.

long finch
#

Thanks. I know I’ve seen that on the shelves of some supermarket.

long finch
native jackal
#

Fortunately, their coffee is better than their advertising copy ehhhh

#

IIRC the last place I saw it in Seattle was Leschi Market.

manic portal
#

vashon is the same guy who started seattle’s best. he has some unusual ideas about coffee, i think he was calling it ā€œnordic roastā€ based on his own ancestry

#

they had it at bartell’s, not sure if there are any left

native jackal
#

Yeah, I remember when it was Seattle's Best. My late wife lived on Vashon while it was still Stewart Brothers. The side of the building still has the old Stewart Brothers sign.

#

I usually get it at the roastery when I visit Vashon, so I don't really keep track of where I see it.

long finch
#

Well I tried both PCC and Met Market but didn't find it. Picked up some Olympia instead. I did see "Nordic roast" on the Vashon website LOL Didn't want to go into Seattle or West Seattle - I think Thriftway has it.

native jackal
#

Yeah, West Seattle Thriftway is likely to have it.

#

There's also the Vashon Island Orthodox monastery coffee, which is also good if you like dark roasts, but the only place I've seen it in town is the Leschi Market.

long finch
#

Took the Ikape on my trip.

dawn shadow
#

I'm debating taking my kettle, orea, and zp6 on a 2-day trip to Portland. Mostly because I have so much coffee already

azure olive
#

I’ve done that for car trips and it works great

#

Just shove it in a box you have lying around

#

But usually I’m going somewhere with no good coffee so it’s easier to justify

half badger
#

Not sure if anyone is interested, but I'm gonna list some coffee equipment later today and wanted to give people here first dips (and a bit of a discount since its a lot easier if its picked up locally haha) for any of them.

Trying to get rid of:

Ode gen 1 w/ssp - $100
Aiden (basically brand new) - $200
Fresh roast sr540 (also pretty much brand new) - $75
Flair Pro 2 - $75

azure olive
#

My wife and landlord would both be thrilled for me to get a roaster but I think I’ll have to pass

half badger
#

Also, unrelated, but we should get another meet up on the books. Happy to host it if people want. I'm pretty busy in March, but maybe in April? @quaint flint will be in town for a bit starting on 4/20 ||šŸ˜¶ā€šŸŒ«ļø || so it'd be fun to do one while he's here. But whenever works for me šŸ™‚ I have a lot of coffee I need to give to people ehhhh

#

Has anyone had coffee from cozy monster roaster yet by chance? Curious where their light roasts sit in comparison to Shoebox for example

fickle nexus
#

I just had both, but the shoebox I had was only naturals

#

Shoebox is marginally lighter

azure olive
#

definitely more developed than my experience with shoebox. he told me he was going for "American light" and I think that's accurate

fickle nexus
#

Idk if I missed out on the true shoebox ul experience but it was not what people made it out to be ime

#

No hay or wheatgrass notes lol

azure olive
#

I had two washed ethiopians from him last september and they were extremely light and hard to brew with (for me)... I'll try again at some point

fickle nexus
#

I just finished the two I had otherwise I’d take a side by side

#

It’s not unlikely I had a dark shoebox and a light cozy monster

#

I’m debating buy more shoebox by I’m kinda tired of waiting for a drop to pay extra then waiting 4 weeks for coffee that’s not that special lol

toxic sail
#

Very much recommend ordering some more shoebox. There’s def some that are more developed, but this is a natural I’m drinking right now

#

I’ll need to try some cozy monster! I can do American light, but I just had an H&S washed and it was so developed compared to shoebox, surprisingly

fickle nexus
#

Does the drop happen on saturdays?

toxic sail
#

Sundays, I think 11am CT IIRC

#

I’ve think the store restocks at somewhat random times though, or maybe I’m just imagining things

#

Like if you missed coffees from previous weeks definitely keep checking because you’ll probably score more of it

fickle nexus
#

I’ll try to grab some tomorrow then. A washed eth or something should be reliable for less developed right?

toxic sail
#

Honestly I’ve found it kind of depends. Like that natural I showed is a Marshall variety from Peru. I’ve had slightly more developed eth washed. I say just got with what you’re interested in and grab a couple

fickle nexus
#

I’m not too particular about what it is as long as the price is justified

fickle nexus
toxic sail
#

I’ve found it varies but there is a thematic band of roast level. Processing ofc changes the perceived color as well

half badger
toxic sail
#

It was the Gedeb Chelbessa!

#

I have the Gitega 861 waiting for me once I finish this bag of shoebox though so we’ll see!

half badger
#

Cozy monster is more developed than hydrangea. Not ul, but can be dialed in well

fickle nexus
#

I honestly feel like this cozy monster I have is comparable to hydrangea

toxic sail
#

Nice! I’ll have to try some. Im still shocked we don’t have UL roasters. You’re our only hope @half badger ehhhh

half badger
# toxic sail It was the Gedeb Chelbessa!

I think thats partially a green thing. I have the same coffee. It's light, but not nearly as light presenting as the other coffees I got from him recently. But I've had other roasts from that washing station that were similar

half badger
fickle nexus
#

I also think it might be this cozy monster

#

I’m planning on going there today or tomorrow with the 2 line opening

#

So I’ll grab another one and see if it’s coal lol

#

I’ve got a hydrangea sub now so I’ve had it a lot lately

toxic sail
#

Keep us posted! I’ve basically stopped ordering new bags so I can try cozy monster because my backlog got wildly out of control (and thus so did my caffeine powered anxiety) kekcry

azure olive
#

There’s definitely overlap between what I’ve had of cozy monster and hydrangea, I’d say on average hydrangea’s still a little lighter

fickle nexus
#

tbh i think it's meetup time

half badger
# toxic sail Nice! I’ll have to try some. Im still shocked we don’t have UL roasters. You’re ...

Whenever I move to a bigger apartment I want to get a Roest to start roasting. But who knows when that'll happen. It's too expensive here kekcry and I'm regularly on the verge of leaving the country for rule 4 reasons ehhhh

I went to roaster works to roast with a friend (and also to see if I'd be interested in using anything there), but I wasn't interested in any of the machines. If cozy monster ends up opening a co roasting space (he's talked about it), I will 100% start roasting lol

Also I just found out this thread existed, nice to meet everyone.

I've been using tap filtered through a Brita for my machine. We all know how good and super soft our water is, mine is specifically at 21 ppm. I asked LM a few years ago who mentioned that using our tap with a Brita should be good enough - just to get rid of any chlorine/odors so I haven't thought about it since.

Recently learned that it could be pretty corrosive.. anyone have any thoughts? What sort of setup are you guys running? RO + Remin setup seems with how good our water is, but definitely don't it eatting my boiler lol. I do both PO + Spro

toxic sail
#

Actually just started ditching my brita for a zero water. Some deep diving led me to realizing the brita makes our water extremely acidic (ph 5.5-6). I noticed this like a year ago with water strip testing but didn’t fully understand what caused it. But yeah my cups are night and day from that change.

#

The reason from what I understand is the brita strips minerals by replacing them with H+. As the water then absorbs CO2 it becomes even more acidic. Yesterday I ended up testing the brita water vs zero water and distilled and yeah…I can’t go back keknervous

#

Fwiw if you have a ton of brita filters like I do - you can run tap through the brita and then that water through the zero water. Extends the life of the zero as well because the brita cuts the TDS in ~half

Ok I need help with the shoebox. It absolutely loves to stall. I’ve tried doing a 5+ super aggressive pours at a 5.5 on a zp6 and it’s still insanely slow. 92c water as well

The only thing that’s worked so far is doing all that with tsibarist fast filters which brings it into the realm of normalcy for regular papers lol.

#

Today I tried cafec t92s and had a 9 minute brew

half badger
fickle nexus
#

Roast date is 3/26

#

Has not been frozen

manic portal
#

which coffee is it?

#

producer/process?

fickle nexus
manic portal
#

makes sense, washed mejorados can be fine-y

#

i'd go down in pours too. newer shoebox ime can take like maybe a 4-5 minute brew time but 9 is too much

#

you can always try it all the way at the opposite end of the brewing approach spectrum (something like medium grounds, one minute bloom + one pour at ~7ml/s) to see if you can get it into fast mode

#

i haven't had this one but just going off the notes it kind of looks like a coffee that wants high extraction tho

obsidian folio
#

oh no t92 if the brew is already slow lol

manic portal
#

oh wait, is t92 the super slow one?

obsidian folio
#

yep

manic portal
#

yeah don't use the super slow mode if you don't want super slow lol

fickle nexus
#

I thought the 92 is the fast one, the t80 is the slow one

#

With tsibarist fast papers it’s closer to 4 minutes but those usually draw down in 2 minutes for me lol

fickle nexus
#

lol yeah I have the cafecs completely backwards. I’ve only ever used the t90s and I heard 92s were for light roast and assumed they were fast, they’re apparently intentionally slow so not sure what the logic is there

#

I’ll try a t90 tomorrow and if that doesn’t change anything I’ll go back the tsibarists

obsidian folio
obsidian folio
#

T-83 for light, T-92 for dark, T-90 when you don't know what to use ehhhh

fickle nexus

fickle nexus
fickle nexus
#

Idk how people taste whether something has rested enough yet

half badger
# fickle nexus High flow rate, but I’ve also been doing agitation. Should I do only one or the ...

Try high flow rate with less agitation, 4x pours instead of 5x. I've never had a brew from them go over 5 min. I aim for 3m for most of my brews too. The Mario hervas mejorado I had from them a while back was kinda stally and needed to be ground a bit coarser, but still finished under 4m. I use hario tabbed filter usually. My zp6 never generated that many fines, but I also kinda hated it so I barely used it šŸ˜…but maybe yours is generating a lot of fines. You're using a v60, right?

half badger
fickle nexus
#

lol maybe I’ll sit on it longer then

#

Using an 02 size v60 yeah

#

15g

manic portal
#

to me an unrested roast tastes like 1) actual grass or 2) kind of an unfocused, blurry version of a specialty coffee. hard to explain the second one but when i brew and nothing is obviously unusual, i have some expectations about the flavor and when they’re not met i usually guess underrested

fickle nexus
#

Maybe everything I drink is under rested lol

#

Or I need the tongue equivalent of glasses

obsidian folio

flat ether
#

toxic sail
# fickle nexus lol maybe I’ll sit on it longer then

I’d give the T90s a shot Jehu I don’t think rest is the problem as far as stalling, but I only say that because I open a lot of my shoebox around 2-4 weeks. Unless the problem you’re trying to deal with is you’re getting a bunch of grass notes? When I was waiting for my Z2 I was using a ZP6 and never had stalls including with that same coffee fwiw at 5.5.

My baseline brew for every coffee is 1 bloom, 2 pours, 15g/250g.
1st pour 50g
2nd pour up to 150g
3rd pour up to 250g (gentle swirl)

Flow rate is about 5-6 g/sec around 4ā€ from the bed. TBT is always 2:30-3:30 depending on the coffee. Really hope this helps keknervous

obsidian folio
#

I also got the impression that washed mejorado is prone to stalling. A previous one from sey is super slow. My current la papaya from hydrangea is the same.

#

The first brew of v60 takes 3:10 and is a little bitter

#

Probably found a good use of sibarist fast sample pack from my AW order keknervous

I'm not sure - luck of the draw. Maybe someone else would know if he has typical hours there?

I have to say their pourover is on the pricey end (considering the coffee they use)

#

although last time the three cups we ordered were brewed well enough

I get coffee at cafes like once a month tops so I’m maybe the least price sensitive consumer, I have no idea what the going rates are

My Seattle peeps, I’m gonna be in your area - U district - this afternoon. Can someone tell me where the really good modern flavors coffee shops are? For comparison I’m from the Portland area and I like PDx coffee club, slow haste, and Sometimes coffee.

Ancient Gate is probably your only chance in u district

seattle is kind of weird in that all the places where there are decent coffee shops are also the ones that are hard to get to

#

the usual recommendations are homage in ballard and daymade in pioneer square, both pretty far away from the u district. besides ancient gate, the closest specialty shop i can think of is analog in capitol hill (a train ride across the cut)

#

ancient gate is pretty aight for a seattle shop tho

Santo in Roosevelt is the next easiest decent place I can think of
