Fount is near the airport and it’s the best cafe in the area IMO.

John Small Odyssey followed by Flower Child Ezzy session this morning. Two wildly different presentations of high quality gesha. Holy shit. Odyssey is full on fruits with a tiny bit of ferment to it. Plum and purple fruit for sure. The Esmerelda is so clean and floral. Both are absolute stunners IMO.
The odyssey is legit amazing. So much flavor intensity and fruit notes from it. I think its the first savage coffee I've actually been wowed by. I've had some really nice roasts of iri and echo, but this one is my favorite for sure. Not sure if you tried the guabo ezzy natural from Big Sur, but it had a very similar profile to this one. But the odyssey has much more intensity and sweetness. The ezzy was cleaner and more complex though. But both of them have that really nice kinda purple/blue fruit thing going on that tastes like an old school ethiopian blueberry bomb with the flavor dial turned up haha
I'm sipping two cups rn, going back and forth. I think the Odyssey eeks out the win for intensity, but wow. Thanks for getting these John Small lots, I'm lucky to have it in my rotation.
I think John Small really shines with their boogie coffee lots haha. All their Panama stuff has been top tier for me. Glad you like it 🙂

Chicago coffee vibes were legit. Only a few core institutions but so many little cafes doing pour over, reall made me miss living in a big city

We were staying in the NW, so mostly spots around there. Day Glow was awesome, Sawada was solid (expected it to be a little dark but it paired great w/ a donut, though the smoked meat venue might have influenced me a bit), and Metric made for an enjoyable jaunt. Missed out on Four Letter Word and Milli, both of which were recommended by a few baristas, but we'll get 'em next time.
cocktail and food scene also super solid. Love coming home to Seattle but it does feel small after a trip sometimes

not sure about hi five but we were really impressed at the quality and ubiquity of ramen there. Went to a place called Rudy's our first night in and it was suuuper tasty
We went to akahoshi ramen and it was amazing

Both the Cap Hill and SoDo Starbucks Reserves closed overnight apparently. Was the coffee good? No. But it was still cool. The SoDo one always seemed to have corporate staff getting punch drunk on boozy coffee drinks before they went back to writing emails and designing campaigns (wait this explains Oleato!) and the Cap Hill one had the cool split flap board, roasters and Willy Wonka pneumatic delivery system. And tourists. A shitload of tourists. I’ll miss your hellaciously overpriced tasty pastries Starbucks Reserves.

Also it was open relatively late. They also hosted events. It definitely brought tourists who might not otherwise come to the area (ie with kids) and I have to believe contributed to foot traffic for other businesses.

i think more than one thing can be true, both 1) the location wasn’t profitable and the ceo is a bean counter and 2) they were unionizing and starbucks has a very anti union stance

According to this person (new thai roaster in Seattle that Kuma is roasting for), it seems like the workers at the reserve weren't given prior notice about the closure

They did. I happened to be in the area on Friday after going to Day Made and needed to do a couple of calls so I headed to the Starbucks HQ for the parking. They still have the tables outside. Quite a few people drove up wanting to get in.

It definitely has a matcha/pastry cafe vibe to it, but I think that's just kinda how it was before he bought it and he didn't really change that. Just added the competition coffee haha.

Analog is straightforwardly good, ghost note has some really good NA coffee cocktails, espresso vivace is a thing
Kairu at the farmers market is fun. Analog is my favorite spot for espresso drinks. None of my favorite spots in the city are in cap hill though. Push & Pull in CD is close ish and solid. Url in yesler terrace is also close ish and solid but not as many funky coffees lol

Comebuytea has pretty solid fruit tea bobas too for a non coffee rec. Heytea is my go to spot though, but it's in SLU

Justin from Tanuki Coffee roasts a lot of the stuff for Koto, I believe, to their desired roast level. He's a great guy/roaster and recently certified Q. His day job is with Broadcast.

the zerno catch cup fits perfectly into the funnel.

Everything I’ve tried from them has been great, lots of juicy sparkling acidity. Pretty cool addition to Seattle, and it looks like there will be a lot of emphasis on specialty drinks in the cafe, which will be a fun contrast with day made just a couple blocks away

I picked up this Sey chiroso yesterday at Analog. Did an impromptu comparison at home with Ode w/ MP SSP burrs, Sculptor 078, and ZP6.
I'd never heard of chiroso before. This one is spot-on with what I associate as a Kenyan coffee profile - tomato vine with that distinct acidity. The SSPs stood out with a spike of punchy acidity that dissipated and allowed some of the other notes come through on the finish. The 078 had consistent and vibrant acidity that did not dissipate, but in comparison to the Ode it was harder to pick up on those other notes. The ZP6 was pleasant but didn't stand out. I will grind finer for my next cup; it definitely has more potential.
Overall, this is a fantastic coffee and would probably taste great even if you ground it with a blade grinder. This was probably the best matchup for SSP burrs to shine and showcase the acidity. Unfortunately, this means I will need to keep all three grinders.
I’m curious, what was the brewing recipe you used and grind size on the 078? I’m trying to dial in the 078 so looking for inspiration there
Also side note, i initially read sey chiroso as soy chorizo and was solidly confused

But two other people said they are around setting 7
also the settings aren't consistent unless you calibrate to zero

yeah, when i first got mine i had to go super coarse for a couple weeks but then it started working normally eventually
calibration is about setting your zero point so your settings are the same as other people's - they all come out of the factory kind of different, so somebody else's 3 could be my 5 or even 7. a youtube video will probably explain it better than i can
And I learned from someone that the knocker typically kicks a bunch of fines out. Or fines and chaff. So maybe don't knock it into the dosing cup unless you want those

I wanted to check out how much of it was actually fines and compared it with the regular grind just by eyeballing it. Def had all fines. Although, with that little amount I don’t think it would have much real affect on taste

If you ever want to slowfeed the 078, there's a 3d printed bit that prevents it from popcorning partially ground beans everywhere; I think I have extras. It does prevent you from dumping beans into the hopper tho

oh no ! that deep rich cherry flavor in the yeast-innoculated coffee was so delicious.
I read the description of the watermelon one and wasn't as enthused..
additionally, normally watermelon is hard to get at peak, so that coferment flavor in particular is often gotten with a combo of artificial and natural flavors

I tried it in the cafe but they only do it as a flat white. They use freeze distilled milk so it was sweet without a sweetener and quite delicious. Keen to experiment with this.
Also tried Zerotoone who are aeropress champions though I did not know this and got a pour over😆
a friend was mentioning that the taste deltas for thermal shock (and yeast innoculation) can be quite wide..

Idk, but if it’s Pike Place market, the space is really nice. If you do want nicer coffee though, i recommend Anchorhead or Cedar and Spokes nearby.
It’s the downtown location rather than the pike one. Kinda surprised I haven’t noticed the pike one.

Honestly the downtown olympia is a great place to hang. Coffee is whatever, but it's a great spot. Hagen opened a new spot next to them too that's solid

Slow day is run by a right wing pastor who is openly homophobic. I worked with him for a bit when he opened up. My original events were in their garage lol. But we broke ties. I have issues with how they approach coffee too, but thats another story.

hagen’s toasts are godly. Their salmon mousse and avocado toasts are pretty amazing
I did get their drip often but only because they were the closes cafe to me, I do prefer Vita’s drip over theirs

the downtown olympia coffee is such a nice space, it's like being in a fancy train terminal but without the trains
Hagen has great pastries and I've bought some beans from them that I liked a good amount, I don't recall how their batch brew is though
The $20 chicken salad is delicious. Their almond croissants and custard filled churro things are good too. I like the Bellevue location. Good place to work away from the office.

Did a quick trip to Paris and tried Clove, Motors and Tiba (all based on Joachim from Substance’s recommendations). Bought some Datura, Dak and Still.
I also experienced the benefit of two different types of cups at Tiba. I thought it was going to be BS. It was not. Or maybe I’m just highly susceptible to the power of suggestion 🙂
How'd you like Still? I hung out with Sabri (the roaster) in the hague for a while. Super nice guy! Working with him pretty soon 🙂
I enjoyed it. It was very tea like and I got a good mango note from it. The blue and white cup was heavier and drinking it from that, it felt like it had more body and was more “syrupy” I got more clarity from the white cup that was lighter. By the way, everyone knows who @half badger is LOL. I showed them some pics of our Coffee Carnage meetups and they were totally into it trying to spot all the different roasters in the shots of the packets. @fickle nexus they geeked out over your Decent.
Nice! He gave me some samples that I enjoyed quite a bit. Excited to drink more from him 🙂 and he's really sweet and I like working with people who are nice irl haha. Super fun how cups can change flavor perception. My wife has even noticed it at some cafes who do it and she's not super into coffee 😅 and that's pretty funny haha. I got recognized on the street in nearly every city I was at in EU and just about everyone at cafes knew me when I was there. Especially in Paris. I'm better recognized there than I am here hahaha

I've got some customers out there, but people know me more for the kinds of coffee I bring on vs having bought from me. Coffee people tend to know me in areas with a stronger scene than here. Plus Joachim and a lot of other coffee folk talk about me fairly often from what I've heard lol. I get some customers here because Joachim told them to buy from me/go to my events 
The munva cups that Story has right now are really nice too. Same idea as the 2 way cups, but much better executed imo
How do you like it? Thinking about buying the Cera+ for travel
It’s pretty good. The stand is a must have accessory though a generic one is fine. I hav the smaller diameter basket and don’t get much in the way of crema. It feels like the 58mm basket should be interchangeable but is not available separately and they never bothered answering my email about it. My favorite thing about is that it is all-in-one and it heats sufficiently (though I’m skeptical that it gets as hot as it claims and I’ve not bothered to measure it). I do wish they would have designed it in such a way that all the accessories fit in the body of the unit.

Elm has closed. I’m not sure if its new owners have opened yet - last month they had not. Depends what you’re after really: Day Made, Homage, Milstead, Push Pull are good options. Vivace if you want more of a traditional Italian espresso. Aroom if you want Instagrammable sweet AF stuff 🙂
Day Made probably only open weekdays. None are really “around” Pike Place and some are not walking distance from there.
Not sure where you're coming from, but our local roasting scene leaves a lot to be desired. Olympia is solid, but ironically I think day made dials them in better than the olympia locations here haha. Their downtown location is beautiful though and worth popping in at least. Agree with all the cafes @long finch recommended. Hagen is another decent local roaster. Fulcrum & herkimer are reasonable roasters too. All pretty dark tho (again, kinda depends on what coffees you like). Cozy monster in bellevue is the only roaster I really recommend, but it's hard to get to if you don't have a car. Sound & Fog is a great multi roaster in west seattle and the c line takes you pretty much right to it. You also get a great view of the city on the west seattle bridge.

I’m flying back tomorrow afternoon and most of the good coffee roasters are closed on the weekends (Kuma and herkimer)
if you specifically want kuma, milstead will stock them (as well as a lot of other local-ish roasters)
there’s like five herkimers, only the downtown one is closed on weekends (basically everything is closed on weekends downtown unless they do tourist business.) if you’re really into them you can just hit up one of the others. they’re coal tho
i’d probably hit up analog on cap hill and buy a bag of stamp act if you want to sample the local scene

If you havent tried it though, you should have the Cafe Nico at Vivace. It’s the most Seattle drink for me, and pretty amazing too
if you're bringing bags home, Olympia and Hagen are my favorites as far as roasted beans, but nothing mindblowing. but I also have a compulsion to bring beans home wherever I travel so I certainly wouldn't tell you not to buy anything
I feel like cafes in seattle need to start stocking cozy monster, given that it's really good, but I don't know their capacity to wholesale to other cafes
gloom is a new roaster but I realized that I'm in no capacity to be a coffee reviewer, because I got free beans and that made it taste great until a couple days later when I realized most of it was roasted a good amount darker than my preferences
What blends do you recommend at Olympia and Hagen?
oh I don't know their blends, I usually just pick a single origin by flavor notes or if I somehow manage to recognize a producer
Olympia has a wide selection but I'm not sure how much of that is stocked at their cafe... I trust day made's selection of Olympia coffee though
if you do go to day made, definitely go to the pastry project a couple blocks away (just for pastries (I've never tried their coffee))
Does it work with 18g? Says it can but recommends 16, I’m used to 21g with my Robot so the closer I can get to that

How important is the stand if I’m using it for travel? Because I could get it from Amazon without the stand and it would come tomorrow
I use mine with 17.5-18g (depends on the grind size obviously) but I’m not sure about the Cera model because the basket size are different I think.
I actually had mine shipped to the UK because I knew I’d be there to receive it. Not sure if that’s an option for you.
I used it without a stand when I first got it and when I got home immediately bought a stand 🙂 And to be clear I have a folding generic stand from Amazon. You don’t need a stand but it does help. The hack without the stand that I used was to let it heat the water while sitting on the counter and then start the extraction when holding it over the cup. Note that I have the one with the app control so it makes it easier. I’ve never used the buttons on the device.

Yep - that pic I posted of my setup in use shows the stand. Works fine. Folds basically flat.

(I can get the model file from my friend.. but it was to fit an OutIn Nano. so you may want to just design one with a micrometer for the Ikape, instead. I like how I can place it on top of almost any cup size, and it's flat.)

Have you heard of any cases that fit it besides the one you can order if you pay for the expensive version? I bought what you have but without a case and I bought the same stand and it’s great.

I too would like a good case for it. Ideally one that fits the grinder, scale, stand, the accessories and the unit. For this last trip, I used an airline amenity kit bag for the grinder and accessories and a packing cube for the rest. It went in my carry on. I have been using one of the cheapest Kingrinders and it isn’t great for espresso, but it is small. I need to spend some dial with my K-Ultra to see if I can get better shots. I would say that mine are more soup-like at this point.
You could probably get a Pelican clone case from Amazon or Harbor Freight or something and pluck the interior foam to the right shape. Unfortunately, it would be quite bulky.
I came across this in London. It is a chain called Roasting Plant. They don’t exactly roast to order but they do roast on-site. I had the Guatemala because I figured dark would be a safer bet. It was about as you would expect and absolutely terrible. I had two sips and left it.

Learning that Walnuts (recent Airworks subscription) is roasted on a Bullet is inspiring. Shows me what to aim for when roasting. Provided that I can source quality green.

Yes, I'm on the single bag sub. I tried chiroso for the first time through Sey, so it was a nice surprise to compare the chiroso from Walnuts.

The Sey was bang-on for what I think of as a classic Kenyan AA. Though my coffee tasting knowledge is admittedly limited. I still have some I can bring to a meetup

got back from Portland yesterday, went to No Preference for a pourover made by Kris from Coffee Ma, it was delightful! he had three pretty coffees, all clean, i had a washed bambito estate gesha from a roaster I forgot the name of. really well done! my partner had a matcha that was also really good. it's right by heart on burnside.

i grew up in mukilteo (suburb above seattle near lynnwood), but also lived in issaquah for a bit
ofc! they had a wall of bags from local roasters to choose from too, maybe four or five different ones
would definitely recommend. it was 9 dollars for a pour over but it was huge and the beans were high quality. Kris talked about each of them briefly and he seemed to know what he was talking about. they have some indoor space and some tables outside, it's not a super well lit space but there's some sunlight. my friend in the neighborhood also recommends it, i think it's relatively new.

But I've lived in LQA & Westlake for a bit and I've eaten at nearly every restaurant here. Kind of a food desert tbh.
The only actually good spot imo is Shiki. Great sushi at a good price. Real old school hole in the wall.
In LQA Tyger Tyger is okay. Uptown China has reasonable good American Chinese food. Golden olive has passable middle eastern food. Nielsen's is great for pastries. Special mention of toulouse petit being one of the worst restaurants in Seattle
don't go there haha. It has good reviews, but i think people just don't have good taste.
Westlake - nothing really. The teriyaki spot is surprisingly solid and you get free miso soup when you dine in. Plus the owner is sweet. So its usually my go to here.
Qa - kinda hate everything there haha. In North QA, Botteco Brazil is actually pretty great. They used to be in lake city, but the moved here recently

Cafe lago has tiramisu now (they haven’t had it any other time I’ve been here) and it’s the best I’ve had in Seattle
I've got all the ingredients for tiramisu, but I've been too lazy to pull 12 shots..

I started making this recipe several years ago and it has been solid. It is a good balance of sweet, coffee and booze. A friend makes one and it tastes like jet fuel because it is over boozed.
TIL I was always told that alcohol evaporates. Turns out it really doesn’t in pudding form. The combination of sugar, caffeine and booze when my youngest allegedly had a few portions throughout the day was quite the thing.
If it has alcohol flavor it’s pretty much dead to me lol
I want some bitterness but booze flavor is ick
FWIW the cafe lago one is made with alcohol and most of the ones I like are too, but I don’t taste the alcohol

Oh man. I just remembered one of the recipes I made last year called for 6 tablespoons of rum. We bought Smith and Cross rum, not knowing how funky/fermented/spicy it was. We couldn't finish it. Incredibly boozy and off-tasting.
I really love Smith and cross rum and go pretty hard with it in desserts 😅
I couldn't touch it for months afterwards. Tasted like that nasty tiramisu. But now I love it. I bet it would go hard with a banana dessert.

Also, for any eastside people, an old barista friend of mine opened a coffee cart in Belleview (Newport). Kinda random location (in the S mart parking lot) and he's struggling a bit to find a customer base. Nothing particularly interesting coffee wise (just Kuma), but it was really well dialed in for espresso and milk drinks. Definitely recommend stopping by if you're into those! 🙂

my total uninformed assumption is that they figured keeping elm going would allow for revenue to come in from whichever cafes bought from them while they build the gloom brand. but I think this is the first time I've seen a cafe use elm so I'm not sure how big of a cash cow that would be

But definitely interested to see where they go with gloom. They told me they're looking to get some "competition coffee" which could be interesting. Their current lineup feels pretty normie. But they haven't even officially opened yet, so I don't have any real thoughts atm lol.
And for the record, I only ever felt that Elm was solid. They were the best we had, not my favorite roaster lol. So definitely could be room for improvement. And always happy to see new people in coffee here. More curious than anything about what they're doing||

all i remember about elm is that one time i thought i left my wallet there, and drove on i5 all the way back, and my wallet was on top of my car the whole time

Yeah, westlake is like 2 streets lol. There's a bunch of apartments, so mid restaurants, a weirdly racist barber, and a reasonably priced dispo lol. Pretty much all that's there besides the tech/hospital/random weird office buildings. When you get passed Aurora, its Queen Anne. But from Aurora to Westlake is Westlake (neighborhood definitions kinda vary though)

"interlake" is a weird one here. it's:
- what the area that is now wallingford was called way back in the day (between lake union and green lake), which a lot of random things were named after
- a high school on the east side, which i think is more of a real area
- not to be confused with interlaken park, which i think is named after the town in switzerland
so it's a term that you might see a lot but not really the name of a place. we just have cardinal direction + lake inside the city, unless i'm forgetting something
oh yeah and interbay is on the other side of queen anne
