Yo! If anyone's free tomorrow at 3pm, Edwin Noreno invited me to a cupping of some of his auction lots and told me I could bring some people (they originally told me not to invite people but then changed their mind i guess lol). It's free, just let me know!

#

Also, I will have a sheet up soon for sibarist filters. Just hasn't been my focus 😅 sorry for the delay!

clear iron
#

oh i’m down

half badger
#

This is the info and address!

#

But it's semi private, so please respond here if you want to go! I have to let them know

i’ll be there

thanks for passing this along!

i think the SCA thread from last year might have some stuff

#

side practice is probably the best shop

#

dayglow good but it's dayglow, so the upcharge is very real

#

4lw pretty good too, though i'm lukewarm on their in-house roasting

#

intelli also runs really good cafes tbh. and they're mostly close to any kind of touristy stuff you might be doing

#

the other three shops are kinda out there if you're not already in logan/lincoln square

vernal cedar
#

staying in wicker park so pretty close to Logan I think

👋 Hello all, just recently joined the discord as a bandwagoner of the LH soup videos. Sad to see I just missed the last meetup

So.. yeah it'll probably be soon haha

#

Another long shot: I’m driving from Raleigh-Durham airport in North Carolina to Asheville, NC on Friday. Any recommendations? B&W probably isn’t on the cards since it is in Raleigh itself. I might be able to hit Counter Culture. Any recommendations along the way (e.g. ByGood in Winston-Salem) and in Asheville itself?

manic portal

little waves is in durham, so kind of on the way. genuinely no idea how they are these days but they were fine a decade ago

#

oh yeah and promethium's shop is somewhere out there. very much no idea if they're good

slim shale
#

i’m pretty sure there’s a good chunk of people on this server that are in that area

#

@harsh timber i know is around there i think, might be able to give some recs

#

i’ve liked little waves when i’ve had them in the past as well

manic portal

i also hear pollen in asheville is pretty good

long finch

I heard the same about Pollen and they’re on my list. I did a search for Asheville and got a few hits on this server.

Fount is near the airport and it’s the best cafe in the area IMO.

Multi-roaster and carries a lot of great stuff. Right now they have datura, friedhats, and dak I believe

John Small Odyssey followed by Flower Child Ezzy session this morning. Two wildly different presentations of high quality gesha. Holy shit. Odyssey is full on fruits with a tiny bit of ferment to it. Plum and purple fruit for sure. The Esmerelda is so clean and floral. Both are absolute stunners IMO.

half badger
# jovial wharf John Small Odyssey followed by Flower Child Ezzy session this morning. Two wildl...

The odyssey is legit amazing. So much flavor intensity and fruit notes from it. I think its the first savage coffee I've actually been wowed by. I've had some really nice roasts of iri and echo, but this one is my favorite for sure. Not sure if you tried the guabo ezzy natural from Big Sur, but it had a very similar profile to this one. But the odyssey has much more intensity and sweetness. The ezzy was cleaner and more complex though. But both of them have that really nice kinda purple/blue fruit thing going on that tastes like an old school ethiopian blueberry bomb with the flavor dial turned up haha

jovial wharf
#

I'm sipping two cups rn, going back and forth. I think the Odyssey eeks out the win for intensity, but wow. Thanks for getting these John Small lots, I'm lucky to have it in my rotation.

Chicago coffee vibes were legit. Only a few core institutions but so many little cafes doing pour over, reall made me miss living in a big city

slim shale

where’d you end up going? i’m there for a wedding this weekend

vernal cedar
#

We were staying in the NW, so mostly spots around there. Day Glow was awesome, Sawada was solid (expected it to be a little dark but it paired great w/ a donut, though the smoked meat venue might have influenced me a bit), and Metric made for an enjoyable jaunt. Missed out on Four Letter Word and Milli, both of which were recommended by a few baristas, but we'll get 'em next time.

slim shale
#

ooo sawada is where green street smoked meats is

#

and is hi five ramen still there?

vernal cedar

cocktail and food scene also super solid. Love coming home to Seattle but it does feel small after a trip sometimes

slim shale

We went to akahoshi ramen and it was amazing

vernal cedar

never been during the winter and hear it's pretty brutal but maybe the food makes a trip worth it

I’ve heard good things about allez in chi

I went to metric. It was ok.

We went in the middle of Feb and it made food taste better indoors lol

I actually had some insanely good poutine at a pub right near the bean. I just remember it had pickled onions iirc. Can’t remember the name

I was also hella cold. That may have influenced how good I thought it was

fickle nexus

If there is still interest, my new apartment building will have a space I can reserve to host more meetups. It’s a little more out of the way from the front door, but is a much cooler venue. It overlooks the red hook brew lab

vernal cedar
#

Whoa Katie Wilson announced support for default upzoning to allow coffee shops across the city. Did not have that on my bingo card

half badger
#

Yo! Doing a pop up with Open on Most Days (the cafe kinda thing that's in west seattle and is not actually open often haha). Tasting a bunch of SEA grown coffee (Filipino, malaysian and vietnamese). We've got a link up through partiful, but if anyone's interested but doesn't want to use partiful, shoot me a message!

vernal cedar
#

agreed! if it actually happened, along with the red tape reduction push on her platform, Seattle might actually meet table stakes in the PNW coffee scene

long finch
#

Both the Cap Hill and SoDo Starbucks Reserves closed overnight apparently. Was the coffee good? No. But it was still cool. The SoDo one always seemed to have corporate staff getting punch drunk on boozy coffee drinks before they went back to writing emails and designing campaigns (wait this explains Oleato!) and the Cap Hill one had the cool split flap board, roasters and Willy Wonka pneumatic delivery system. And tourists. A shitload of tourists. I’ll miss your hellaciously overpriced tasty pastries Starbucks Reserves.

fickle nexus
#

Yeah I was really surprised to see that. The cap hill one was almost always packed. I kinda regret not going back at least once

vernal cedar
#

Oh shit - closed forever as part of the layoffs?

fickle nexus
#

At least indefinitely? They said there wasn’t a path to profitability

coarse imp
#

That’s shocking

#

But some shops are not for profits. Closing your flagship shop in the city of HQ is wild

fickle nexus
#

It was a sbucks for the culture

vernal cedar
#

Let us hope that it opens up the market for some smaller better shops🤞
SBUX been casting a shadow on Seattle coffee for too long

manic portal
#

like david, i will mourn that giant ridiculous starbucks. at a minimum, it was an extremely funny coffee shop, which we don't have enough of.

#

are all the tourists going to have to join the line at "the original" pike place sbux now? can our infrastructure even support that?

long finch
long finch
spice pelican
#

As much as I don't drink Starbucks I really think the reserve added a lot of culture to capitol hill that potentially doesn't involve drinking

#

And is family friendly

#

That's two huge retail spaces now vacant on the hill, which doesn't bode well :/

long finch
#

Also it was open relatively late. They also hosted events. It definitely brought tourists who might not otherwise come to the area (ie with kids) and I have to believe contributed to foot traffic for other businesses.

Word is that the stores were unionizing.

slim shale
#

i think more than one thing can be true, both 1) the location wasn’t profitable and the ceo is a bean counter and 2) they were unionizing and starbucks has a very anti union stance

long finch
# slim shale i think more than one thing can be true, both 1) the location wasn’t profitable ...

But but but it must be only one thing! 😜 /s

I assume both are expensive locations, high staff costs, increasing input costs and given that everything was very manual, low volume relatively speaking?

https://www.reddit.com/r/starbucksbaristas/s/YhVlxrEe4Y

You’re absolutely right though. Interesting that people are spooked that the HQ will move.

holy shit the Whole Foods that was there has a lease through 2038!!!??!!

I think the same is true for the short lived Whole Foods offshoot that opened up on the edge of Bellevue Square a few years ago.

The Capitol Hill Starbucks Roastery is permanently closed. Starbucks shut down the more than $20 million coffee destination with boarded windows and a paper sign Thursday morning. “It is with…

fickle nexus
#

I am legit upset by the Amazon fresh and Whole Foods closures. If qfc left (and they have many reasons to consider it) I would be a bus ride from any grocery store

#

I am impressed that the Victrola location managed to survive 10+ years right next to reserve, they must’ve done something right

half badger
#

General Porpoise did pretty much the same thing too. That was also because they had unionized

#

Honestly wild move to close the reserves here though

fickle nexus
#

According to the CHS article, the reserve location unionized in 2022 but they did do some kind of rally outside the cap hill location on Monday

#

And yeah the whole overnight no notice closure thing is highly sus

spice pelican
#

Oh I forgot about the wholefoods being closed too, that's 3 large retail spots empty

#

Redhook being the other

slim shale
#

hopefully they don’t have some non-compete clause in the lease

spice pelican
#

Groceries in capitol hill proper is dire

long finch
# spice pelican Redhook being the other

Yeah I’d been doing my Video Tech meetup at Redhook for years. It started going downhill in Jan with random closures. Seems the new owner ran it into the ground I recall reading

#

It is a plot by Big Restaurant to keep you from making your own food!

#

Slight topic change; now that I’m basically in the office all the damn time I am going to make my Pulsar my office brewer. But I need a kettle suggestion since the unknown and variable temp “tea water” isn’t going to cut it and also a grinder. I have an EKG at home and a 1Zspresso K-Ultra. I’m happy for this to be a low cost work setup. I was thinking of something like this

#

And the kingrinder P thing that Lance reviewed.

spice pelican
#

I was going to buy a time more kettle for the office

fickle nexus
#

I have no complaints about the bonavita, but my friend has been using that kettle for years without trouble

#

I really want my bonavita to die so I can waste more money on a hario lol

spice pelican
#

Apparently there's a niche somewhere in the office

long finch
spice pelican
#

It's hidden because we're technically not allowed to have unsanctioned appliances at work

long finch
#

I kinda like those rubber collapsible ones but they scare me.

spice pelican
long finch
#

What if I bring in a propane burner and a non electric kettle. Then it isn’t an appliance just an open flame 😂

spice pelican
#

I'm not going to get into the business of espresso at work because that's annoying

spice pelican
long finch
#

Right. Just gonna do PO

long finch
spice pelican
#

So birthday cake candles have to be snuck in and the admins can't know

#

Also no alcohol in the office unless you hired a bartender

long finch
#

That I knew. When I worked at Oracle one of the engineering managers had an entire wet bar in his office.

uncut harness
#

waoh

#

the cap hill whole foods closed too?

#

that was my place when I lived there

manic portal
#

the whole foods was kind of wild

#

they closed it basically overnight, put everything on deep sale and cleared the place out

#

but they have a lease on the space through 2038

long finch
#

It is insane that they are presumably paying the lease and getting nothing for it. Not even subleasing it to Spirit Halloween or something. I guess the rationale for that wasn’t covered in the corporate finance class I took. I imagine it begins with a T and ends in an S though.

Thanks to @half badger grinder comparison event, I realized my grinder FOMO was justified and am now the proud owner of a ZP6 and Sculptor 078.

I love the ZP6. It's so different than the Ode w/ SSP profile.

half badger

But also stonks stonks stonks it really does make a difference tbh. As much as I want to not care about gear, I definitely care about grinders now (and want to compare more drunkkek)

half badger
dawn shadow
#

I picked up this Sey chiroso yesterday at Analog. Did an impromptu comparison at home with Ode w/ MP SSP burrs, Sculptor 078, and ZP6.

I'd never heard of chiroso before. This one is spot-on with what I associate as a Kenyan coffee profile - tomato vine with that distinct acidity. The SSPs stood out with a spike of punchy acidity that dissipated and allowed some of the other notes come through on the finish. The 078 had consistent and vibrant acidity that did not dissipate, but in comparison to the Ode it was harder to pick up on those other notes. The ZP6 was pleasant but didn't stand out. I will grind finer for my next cup; it definitely has more potential.

Overall, this is a fantastic coffee and would probably taste great even if you ground it with a blade grinder. This was probably the best matchup for SSP burrs to shine and showcase the acidity. Unfortunately, this means I will need to keep all three grinders.

potent stump
#

Also side note, i initially read sey chiroso as soy chorizo and was solidly confused

dawn shadow
#

V60 with abaca filters, 18g : 300g, setting 6. Lowest RPM for this one

#

Soy chorizo is great. Picked up some last night from Grocery Outlet. I could try running that through the same recipe..

potent stump
#

Oh wow setting 6?
Ive been doing 12 with the lowest rpm with 3min drawdowns on T-90s

#

For 15:250

dawn shadow
#

I'm very new to the Sculptor. The marking at 3 o clock is where your grind is set, right? I'm pretty sure, because of the little magnetic clip that goes there.

potent stump
#

Yeah that’s what I’m using as the marker (I’m also new to the 078)

#

Ill try going much lower and see what happens for my afternoon cup today

dawn shadow
#

Also about a 3 min drawdown. Some gentle agitation. 12 seems very coarse. There was someone at the grinder comparison event who said they were at setting 3-4.

manic portal
#

fwiw the sculptor breaks in a lot and will work pretty differently a month or two out

dawn shadow
#

But two other people said they are around setting 7

manic portal
#

also the settings aren't consistent unless you calibrate to zero

dawn shadow
#

Good to know!

#

Mine was used, well broken-in

potent stump
#

Aaaaaaah mine’s unused
That makes sense now. It will need some seasoning time and maybe calibration?

manic portal
#

yeah, when i first got mine i had to go super coarse for a couple weeks but then it started working normally eventually

#

calibration is about setting your zero point so your settings are the same as other people's - they all come out of the factory kind of different, so somebody else's 3 could be my 5 or even 7. a youtube video will probably explain it better than i can

dawn shadow
#

And I learned from someone that the knocker typically kicks a bunch of fines out. Or fines and chaff. So maybe don't knock it into the dosing cup unless you want those

potent stump
#

Oh yeah i do know that about the knocker

#

I wanted to check out how much of it was actually fines and compared it with the regular grind just by eyeballing it. Def had all fines. Although, with that little amount I don’t think it would have much real affect on taste

manic portal
#

i think it usually tastes better with the fines tbh

fickle nexus
#

That was an 078 not 078s, maybe that’s the difference

#

I never zeroed it though

The Stranger

We've been telling you for a while that you might not want to spend your money at Storyville Coffee, which has three posh cafes in Seattle, because of its tangled history with cultish, creepy, conservative, and increasingly embattled Mars Hill Church. Mars Hill Church is, of course, the home of creepy, misogynist, anti-gay pastor Mark Driscoll (...

Did a quick trip to Paris and tried Clove, Motors and Tiba (all based on Joachim from Substance’s recommendations). Bought some Datura, Dak and Still.

How'd you like Still? I hung out with Sabri (the roaster) in the hague for a while. Super nice guy! Working with him pretty soon 🙂

I enjoyed it. It was very tea like and I got a good mango note from it. The blue and white cup was heavier and drinking it from that, it felt like it had more body and was more “syrupy” I got more clarity from the white cup that was lighter. By the way, everyone knows who @half badger is LOL. I showed them some pics of our Coffee Carnage meetups and they were totally into it trying to spot all the different roasters in the shots of the packets. @fickle nexus they geeked out over your Decent.

Nice! He gave me some samples that I enjoyed quite a bit. Excited to drink more from him 🙂 and he's really sweet and I like working with people who are nice irl haha. Super fun how cups can change flavor perception. My wife has even noticed it at some cafes who do it and she's not super into coffee 😅 and that's pretty funny haha. It’s pretty good. The stand is a must have accessory though a generic one is fine. I hav the smaller diameter basket and don’t get much in the way of crema. It feels like the 58mm basket should be interchangeable but is not available separately and they never bothered answering my email about it. My favorite thing about is that it is all-in-one and it heats sufficiently (though I’m skeptical that it gets as hot as it claims and I’ve not bothered to measure it). I do wish they would have designed it in such a way that all the accessories fit in the body of the unit.

Any local coffee roasters that yall can recommend in the city? Currently staying near Pike Market. I heard Olympia and Elm are a must visit

long finch

Elm has closed. I’m not sure if its new owners have opened yet - last month they had not. Depends what you’re after really: Day Made, Homage, Milstead, Push Pull are good options. Vivace if you want more of a traditional Italian espresso. Aroom if you want Instagrammable sweet AF stuff 🙂

Day Made probably only open weekdays. None are really “around” Pike Place and some are not walking distance from there.

half badger
# coarse gulch Any local coffee roasters that yall can recommend in the city? Currently staying...

Not sure where you're coming from, but our local roasting scene leaves a lot to be desired. Olympia is solid, but ironically I think day made dials them in better than the olympia locations here haha. Their downtown location is beautiful though and worth popping in at least. Agree with all the cafes @long finch recommended. Hagen is another decent local roaster. Fulcrum & herkimer are reasonable roasters too. All pretty dark tho (again, kinda depends on what coffees you like). Cozy monster in bellevue is the only roaster I really recommend, but it's hard to get to if you don't have a car. Sound & Fog is a great multi roaster in west seattle and the c line takes you pretty much right to it. You also get a great view of the city on the west seattle bridge.

if you're bringing bags home, Olympia and Hagen are my favorites as far as roasted beans, but nothing mindblowing. but I also have a compulsion to bring beans home wherever I travel so I certainly wouldn't tell you not to buy anything

#

I feel like cafes in seattle need to start stocking cozy monster, given that it's really good, but I don't know their capacity to wholesale to other cafes

#

I used it without a stand when I first got it and when I got home immediately bought a stand 🙂 And to be clear I have a folding generic stand from Amazon. You don’t need a stand but it does help. The hack without the stand that I used was to let it heat the water while sitting on the counter and then start the extraction when holding it over the cup. Note that I have the one with the app control so it makes it easier. I’ve never used the buttons on the device.

I too would like a good case for it. Ideally one that fits the grinder, scale, stand, the accessories and the unit. For this last trip, I used an airline amenity kit bag for the grinder and accessories and a packing cube for the rest. It went in my carry on. I have been using one of the cheapest Kingrinders and it isn’t great for espresso, but it is small. I need to spend some dial with my K-Ultra to see if I can get better shots. I would say that mine are more soup-like at this point.

But I've lived in LQA & Westlake for a bit and I've eaten at nearly every restaurant here. Kind of a food desert tbh.

The only actually good spot imo is Shiki. Great sushi at a good price. Real old school hole in the wall.

In LQA Tyger Tyger is okay. Uptown China has reasonable good American Chinese food. Golden olive has passable middle eastern food. Nielsen's is great for pastries. Special mention of toulouse petit being one of the worst restaurants in Seattle ehhhh don't go there haha. It has good reviews, but i think people just don't have good taste.

Westlake - nothing really. The teriyaki spot is surprisingly solid and you get free miso soup when you dine in. Plus the owner is sweet. So its usually my go to here.

  2. a high school on the east side, which i think is more of a real area
  3. not to be confused with interlaken park, which i think is named after the town in switzerland
so it's a term that you might see a lot but not really the name of a place. we just have cardinal direction + lake inside the city, unless i'm forgetting something

Weird. I've been to the Switzerland one but I don't know that I've been to any of the seattle ones yet

seattle is full of fake place names, it's weird. google maps keeps making up neighborhoods too. the confusion is incredibly understandable
