So it can be very inconsistent if you're moving your hand too much/fast.

My suggestion is to land on the ice with your hand straight out in front of you so you land only on that hand.
Then, instead of using your hand/wrist/elbow/shoulder to move, turn from your hips, so that your entire upper body turns. This will naturally limit your movement so that it's much easier to control your slide.

Are you testing it at the bottom of mountains, or in forest, so that you're on flat ground?
You can only influence the direction you're going, so don't expect to turn 90⁰, only turn a little bit at a time until you get a feel for it
Also remember to be sticking out your hand, you will move in the direction that your hand is, in relation to your body
