It's hard to summarize as there's a couple aspects to it.
Don't worry about using shader nodes in blender, or using blenders shading system at all really if you're planning on porting it to unity. The biggest thing you want to worry about in blender is UV wrapping.
Changing and applying textures is simple once you get the hang of it, but UVs are always a hassle, but they're highly necessary to understand if you want to make your texturing look good/natural

For your purposes, your shading time in blender should really only consist of making sure an input texture node is connected to an output one so that it actually shows an image lol

HOWEVER KEEP IN MIND: Assigning multiple materials to the same mesh can lead to eventual performance issues, so the more you can do with less the better.
