I mean, my own personal suggestion is to just prioritize what you want to get. They seem to bring Assembly groups back semi-regularly, and the assumption isn't necessarily that you're going to get everything at once. Choose what you like from the spirits and save your candles and hearts for the rest

Yes there are a few quests you can play where you can hold a friend's hand. Nesting final quest, performance final quest, and moments final quest to name a few. Any quest where you have to grab a spirit's hand and lead them somewhere also counts for the daily

I get too shy approaching or joining people to complete the friend dailies, so the way I complete the hold a a friend's hand daily is by going to daylight prairie village, look for a moth that has the hold hand to find a spirit option and hold their hand😭
I've tried the spirit quests once, but it didn't work for me it was a long while back though
