In the gene menu, you add genes that you've discovered to replace the genes they started with. If you line up the colours, a gene turns "golden" and adds more to their stats

So sometimes adding a "weaker" gene can give you more because they have different colour lines

It took me a while to find all the genes. The "eye of insight" magnifying glass helped in getting the last few, since it highlights units with something new to unlock

I think you have to turn off both the reproduction settings for it to stop them from doing so

I.E if they had egg births you turn off that and their ability to reproduce male to female or etc

An alternative way of doing that would be making one of their at birth traits “infertile” so they can’t reproduce
